Vegetables are an important part of a balanced, nutritious diet and eating a variety will help ensure you get enough vitamins, minerals, antioxidants and fibre that they contain.

Yet most of us don’t eat enough vegetables. Whether you want to include more veggies in your diet, or you’re looking for tastier ways to serve veggies to your kids, here are some ideas more exciting than salads to try!

Add them to your smoothies

When making smoothies, don’t just think fruit - add some vegetables too. Add baby spinach or other leafy greens along with fruit and your other smoothie ingredients and you’ll hardly taste the greens, but you’ll get all the benefits. Swap out spaghetti for veg noodles

Thanks to the low-carb movement there are plenty of better for you spaghetti alternatives available now, such as cauliflower noodles and zucchini noodles. If you own a spiralizer, you can always easily make your own veggie noodles like carrots, courgettes and sweet potatoes.

Veggie packed mash

Swap out your mashed potatoes with other mashed veggies - sweet potato, caluiflower carrot, pumpkin and butternut work really well.
