Kale - this trendy leafy green superfood is everywhere - kale smoothies, kale powder, kale chips and kale salads. It has become so popular because it is one of the healthiest and most nutritious plant foods in existence with tons of health benefits. It’s high in antioxidants, fibre, vitamin C and vitamin K and low in calories.

But raw kale isn’t the tastiest superfood around - it’s tough and bitter. If you haven’t liked raw kale salads before, you might be surprised to learnt that the key to improving its taste and texture is giving it a massage!

All it takes is a few minutes of massage to transform tough, bitter kale into a tenderized, silky green. Massaging it helps break down the tough cell walls, giving it a softer texture and gentler flavour.

All you need to do is add some olive oil, vinegar or lemon juice to a bowl of chopped up kale. Gently rub for a few minutes, kneading and squeezing until it becomes tender enough for your liking. Watch the video below to see how it’s done!

You don’t always have to massage kale - this trick is only necessary when eating raw kale. If you’re cooking kale, you shouldn’t need to massage it first, as it’ll break down and soften during the cooking process.
