How to: Butterfly a Chicken Breast

Chicken breasts are lean, affordable, and versatile, but their own drawback is their uneven thickness - the thin side gets overcooked while the thick side finishes cooking.

Butterflying is a useful technique where the chicken breast is cut horizontally, creating a uniform thickness throughout so that it will cook more quickly and evenly. Butterflied is perfect for pan-frying or stuffing chicken breasts.

Here’s how you do it, make sure to watch the video below to see exactly how.

  • Start with a sharp knife and place your chicken breast on a chopping board.

  • Place your hand on top of the boneless, skinless chicken breast, slice horizontally into the chicken, dividing it half. Be careful not to cut all the way through to the other side.

  • When done, you should be able to open up the chicken like a book so it lies flat.
