Chef George will make Seared Beef Sirloin with Charred Aubergine, served with Creamed Swiss Chard and Roasted Baby Tomatoes. A beautiful signature dish - originating in the heart of Stellenbosch - from his seasonal menu at Jordan restaurant.

“I love cooking with aubergine,” says George, “they’re amazing right now and perfect for the season. This dish is easy to do in large numbers, too, while still maintaining a beautiful presentation."
