Yummy Fresh Tomato Sauce

We always prefer homemade! But what's even better than making this sauce from fresh tomatoes is that you know exactly what else is in it. Or more precisely what's NOT in it ... you definitely don't want any nasty preservatives or harmful spices. It's so easy too and the best part is that is soooooo delicious! We usually include fresh tomato sauce from Brenda's - the amazing fresh preserve shop on the Spice Route at Fairview Farm - in our Daily Dish boxes. It's made fresh for us and contains no preservatives and is totally yum! But if you have time to make this fresh tomato sauce at home (it takes about 50 minutes - 10 minutes prep and 40 minutes cooking time), you won't regret it.

YUMMY FRESH TOMATO SAUCE - enough for 4 pasta servings
4 fresh tomatoes
1 clove garlic - crush, peel and chop finely
Large pinch of dried oregano
1 bay leaf
½ tsp sugar (or xylitol if you're banting)
Olive oil
Freshly ground salt and pepper

Cut the tomatoes in half and grate on the coarse side of a box grater (into a large bowl). Do not grate the skin.

Place a few glugs of olive oil in a large saucepan on medium heat. You don't want it too hot otherwise the garlic will burn. When the oil is hot, add the garlic and stir for about a minute. Now add the grated tomato, oregano, bay leaf, sugar, salt and pepper. Turn the heat up and stir until the mixture start to bubble - this should take around 3 to 5 minutes. Then turn the heat down to low and leave to simmer (bubble gently) for about 40 minutes. Give it a little stir every 10 minutes or so. The sauce will become thick and yummy. Taste to see if it needs more salt and adjust if necessary. Remove the bay leaf. It's now ready for your pasta dish.

You can keep the fresh tomato sauce in your fridge for up to 2 days.
