Baked Fish with Bacon & Pine Nuts

A quick, easy and delicious dish - fish baked in the oven with green beans, garlic, lemon and bacon and served with toasted pine nuts.




Ingredients to serve 2

  • 2 fillets x angelfish
  • 175g x green beans, cut the ends off
  • 1 clove x garlic, peel and finely slice
  • 2 rashers x back bacon
  • 1 clove x lemons, slice in half
  • 15g x pine nuts
  • olive oil, salt and pepper (from your pantry)

  • 4 fillets x angelfish
  • 350g x green beans, cut the ends off
  • 2 cloves x garlic, peel and finely slice
  • 4 rashers x back bacon
  • 2 x lemons, slice in half
  • 25g x pine nuts
  • olive oil, salt and pepper (from your pantry)

Method

Step 1

Preheat the oven to 200⁰C.

Step 2

Line the bottom of a baking tray with the beans. Sprinkle with olive oil. Lay the angelfish fillets on top of the beans. Scatter with garlic slices, salt and pepper. Place a rasher of bacon over each fillet, sprinkle with pine nuts and drizzle a little more olive oil over the top. Squeeze the lemon juice over the fish and place the lemons in the tray. Bake for about 10 to 15 minutes. Angelfish cooks quickly so check it a few times – it should flake easily when cooked.

Step 3

To serve, divide the fillets of fish between the plates and add a serving of green beans on the side. Remember to spoon the juices from the tray over the fish.
