Farfalle with Bacon & Tomato Sauce

A tasty pasta dish made with special smoked bacon - (preservative free) from our fabulous butcher - in a creamy, tomato sauce. Very yummy!




Ingredients to serve 2

  • 175g x farfalle pasta
  • 125g x bacon - slice in to thin strips
  • 1/2 x onion - peel and chop finely
  • 1/2 tin x peeled tomatoes
  • 1 tbsp x tomato paste
  • 1/2 tsp x dried oregano
  • 1/2 tsp x sugar (from your pantry)
  • 1/2 tub x sour cream
  • 25g x parmesan - grate finely
  • 1 tbsp x fresh parsley - chop finely
  • olive oil, salt & pepper (from your pantry)

Ingredients to serve 4

  • 350g x farfalle pasta
  • 250g x bacon - slice in to thin strips
  • 1 x onion - peel and chop finely
  • 1 tin x peeled tomatoes
  • 2 tbsp x tomato paste
  • 1 tsp x dried oregano
  • 1 tsp x sugar (from your pantry)
  • 1 tub x sour cream
  • 50g x parmesan - grate finely
  • 2 tbsp x fresh parsley - chop finely
  • olive oil, salt & pepper (from your pantry)

Method

Step 1

Bring a large saucepan of lightly salted water to the boil. Add the pasta (and a little olive oil) and cook for about 5 to 6 minutes until al dente - that’s cooked but firm to the bite and not soft. Drain in a colander, drizzle with a little olive oil and set aside.

Step 2

Heat a teaspoon or two of olive oil in a large pan on medium to high heat. Add the bacon strips and fry until slightly crispy. Add the onion and sauté for 3 or 4 minutes until translucent. Add the tinned tomatoes - including the liquid - and break them up with a spoon (or potato masher). Turn the heat down to medium and add the tomato paste, dried oregano and sugar and simmer gently for about 15 minutes, stirring quite often. Add the cream and grated parmesan (reserving a little for the garnish) and stir to heat through. Season with freshly ground salt and pepper. Taste to check if seasoning is ok and add more if necessary.

Step 3

Finally, add the farfalle to the bacon and tomato sauce mixture and fold together gently.

Step 4

To serve, divide the pasta between the plates and scatter with parsley and a little parmesan.
