Tahini Chicken

Tahini Chicken

Free range chicken breasts seared in a hot pan and served with a tahini sauce made from freshly roasted and ground sesame seeds, garlic and olive oil. Accompanied by butter carrots and jasmine rice.




Ingredients to serve 2

  • ½ cup x jasmine rice
  • 2 x free range chicken breasts
  • 4 x carrots – peel and slice
  • . x TAHINI DRESSING
  • 1 tbsp x tahini base
  • 2 tbsp x olive oil (from your pantry)
  • ½ clove x garlic - crush, peel and chop finely
  • butter (from your pantry)
  • vegetable oil, salt and pepper (from your pantry)

  • 1 cup x jasmine rice
  • 4 x free range chicken breasts
  • 8 x carrots – peel and slice
  • . x TAHINI DRESSING
  • 2 tbsp x tahini base
  • 4 tbsp x olive oil (from your pantry)
  • 1 clove x garlic - crush, peel and chop finely
  • butter (from your pantry)
  • vegetable oil, salt and pepper (from your pantry)

Method

Step 1

Rice: Bring a saucepan of lightly salted water to the boil. Add the rice and boil gently for 15 minutes on medium heat. Drain and keep warm in a colander over a saucepan of hot water.

Step 2

Chicken: Season the chicken well with salt and pepper. Melt a few knobs of butter in a large frying pan on medium heat. Add the chicken and pan fry for 6 or 7 minutes on one side and then turn and cook for another 6 or 7 minutes. Now and again, spoon the butter over the chicken to keep it moist. (Turn only once.) Remove from the stove and allow to rest on a plate covered with tin foil.

Step 3

Carrots: Bring a saucepan of lightly salted water to the boil. Add the sliced carrots and boil gently for 5 minutes on medium heat until cooked but still slightly crunchy. Drain. Return the saucepan (with the carrots) to the stove with the heat turned OFF. Add a few knobs of butter and leave to melt.

Step 4

Tahini Dressing: Whisk the tahini base with olive oil (see Tahini Dressing ingredients for quantity above), garlic and a little salt.

Step 5

To serve, divide the rice and carrots between the plates. Place a chicken breast on each plate and drizzle with tahini dressing.
