Chicken with Broccoli & Almonds

Free range chicken breasts, coated in a spicy rub and then seared to perfection and cut into succulent strips. Mixed with crunchy broccoli florets, toasted almonds, sesame oil and chilli flakes.




Ingredients to serve 2

  • 3 x free range chicken breasts
  • 2 tbsp x chicken spice rub
  • 1/2 head x broccoli - cut into florets
  • 1/4 tsp x chilli flakes
  • 4 tbsp x flaked almonds
  • 1 tsp x sesame oil
  • olive oil, salt & pepper (from your pantry)

Ingredients to serve 4

  • 6 x free range chicken breasts
  • 4 tbsp x chicken spice rub
  • 1 head x broccoli - cut into florets
  • 1/2 tsp x chilli flakes
  • 8 tbsp x flaked almonds
  • 2 tsp x sesame oil
  • olive oil, salt & pepper (from your pantry)

Method

Step 1

Put a pan on medium to high heat. Add the flaked almonds to the dry pan and toast for a minute or two until lightly browned. Shake the pan often so that they don’t burn. Remove and set aside.

Step 2

Place the chicken breasts on a chopping board or in a large bowl. Drizzle with olive oil and coat all over. Then sprinkle with the chicken spice rub. Roll the chicken in the rub to coat all over. Place a large frying pan on high heat. When the pan is hot, sear the breasts for a few minutes on each side until browned, then reduce the heat to medium and sauté for about 5 minutes on each side or until just cooked through. Remove from the pan and allow to rest for a few minutes. Cut into thin slices (about 5 mm thick).

Step 3

Place a saucepan of lightly salted water on to boil. Add the broccoli florets and allow the water to come back to the boil, and once boiling again, let it cook for about 1 minute. Remove from stove and drain.

Step 4

Heat a tablespoon of olive oil in a large frying pan on high heat. Add the red chili flakes. Once the red chili flakes are sizzling, add the broccoli florets, sliced chicken, and toasted almonds. Drizzle sesame oil over the broccoli and chicken, sprinkle with salt and freshly ground black pepper to taste. Toss and cook for about a minute or two.

Step 5

Serve immediately.
