South Indian Fish Curry

White fish simmered in a delicious mixture of onions, red peppers and fresh chillies flavoured with coriander, turmeric and ginger. Served on a bed of basmati rice.




Ingredients to serve 2

  • 250g x white fish - cut into large chunks
  • 1/2 x onion – peel and quarter
  • 1/2 x red pepper – slice into thin strips
  • 1 clove x garlic – crush, peel and chop finely
  • 1/2 tsp x black mustard seeds
  • 1/2 tsp x ground coriander
  • 1/8 tsp x turmeric
  • 1/8 tsp x chilli powder
  • 1 x fresh chillies – de-seed and chop finely
  • 1/2 tsp x ginger – peel and grate finely
  • 1/2 tin x coconut milk
  • 85ml x water
  • 5g x fresh coriander - chop
  • 1/2 cup x basmati rice
  • vegetable oil, salt and pepper (from your pantry)

Ingredients to serve 4

  • 500g x white fish - cut into large chunks
  • 1 x onion – peel and quarter
  • 1 x red pepper – slice into thin strips
  • 2 cloves x garlic – crush, peel and chop finely
  • 1 tsp x black mustard seeds
  • 1 tsp x ground coriander
  • 1/4 tsp x turmeric
  • 1/4 tsp x chilli powder
  • 2 x fresh chillies – de-seed and chop finely
  • 1 tsp x ginger – peel and grate finely
  • 1 tin x coconut milk
  • 175ml x water
  • 10g x fresh coriander - chop
  • 1 cup x basmati rice
  • vegetable oil, salt and pepper (from your pantry)

Method

Step 1

Bring a saucepan of lightly salted water to the boil. Add the rice and boil gently for 15 minutes. Once cooked, drain and keep warm in a colander over a saucepan of hot water.

Step 2

Place a few glugs of vegetable oil in pan on medium to high heat. Fry the onion wedges for about 3 or 4 minutes until translucent and just turning golden. Add the red pepper, fresh chillies, garlic, black mustard seeds and fry for 2 to 3 minutes more. Now add the ground coriander, turmeric, chilli powder, fresh ginger and stir-fry for another minute. Pour in the coconut milk and water and leave to simmer for 8 to 10 minutes. Then season to taste. Add the fish and simmer gently with the lid on for 4 to 5 minutes or until just cooked.

Step 3

To serve, divide the rice between the bowls and serve a portion of fish on top. Scatter with chopped coriander.
