Spaghetti Bolognese

Spaghetti Bolognese

Lean beef mince stir-fried with carrot, celery and garlic. Then mixed with chopped tomatoes and seasoned with oregano and Worcestershire Sauce. Served atop spaghetti with a sprinkling of finely grated Parmesan cheese. Quick, easy and delicious!




Ingredients to serve 2

  • 250g x lean steak mince
  • 1/2 x onion – peel and chop finely
  • 1 x carrots – peel and slice finely
  • 1/2 stick x celery – slice finely
  • 2 cloves x garlic – crush, peel and chop finely
  • 1 tin x chopped tomatoes
  • 1 tbsp x tomato paste
  • 1/2 tsp x dried oregano
  • 1 tbsp x Worcestershire Sauce
  • 200g x spaghetti
  • 25g x parmesan cheese – grate finely
  • olive oil, salt and pepper (from your pantry)

Ingredients to serve 4

  • 500g x lean steak mince
  • 1 x onion – peel and chop finely
  • 2 x carrots – peel and slice finely
  • 1 stick x celery – slice finely
  • 4 cloves x garlic – crush, peel and chop finely
  • 2 tins x chopped tomatoes
  • 2 tbsp x tomato paste
  • 1 tsp x dried oregano
  • 2 tbsp x Worcestershire Sauce
  • 400g x spaghetti
  • 50g x parmesan cheese – grate finely
  • olive oil, salt and pepper (from your pantry)

Method

Step 1

Place a few glugs of olive oil in a large frying pan on medium to high heat. Add the onion and sauté for 3 or 4 minutes until translucent. Add the garlic and stir fry for a minute (be careful it does not burn). Now crumble the beef into the pan and stir fry for about 2 minutes to break up the meat and brown it.

Step 2

Add the carrot and celery. Stir over a medium heat for a minute to soften, then add the chopped tomatoes and the tomato paste. Stir well, then add the oregano and Worcestershire Sauce. Season to taste. Simmer gently over medium heat, stirring occasionally, for about 15 minutes.

Step 3

While the sauce is cooking, bring a large saucepan of lightly salted water to the boil. Add a few drops of olive oil and the spaghetti and cook for 6-8 minutes. Once cooked, drain and keep warm in a colander over a saucepan of hot water on low heat. Sprinkle with a little olive oil to prevent the spaghetti from sticking together.

Step 4

To serve, divide the pasta between the bowls. Top with the bolognese sauce. Toss gently and serve immediately with grated parmesan cheese scattered on top.
