Solo: Beef Sausages & Tabbouleh

Our pure beef (no preservatives or cereal) sausages served with a crunchy super fresh Tabbouleh salad with a dollop of sour cream on the side.

Ingredients to serve 1

  • 2 x beef sausages
  • ¼ x cauliflower – grate coarsely
  • ¼ x onion – chop finely
  • 3g x fresh parsley – chop finely
  • 3g x fresh mint – chop finely
  • 3g x fresh dill – chop finely
  • 3g x fresh chives – chop finely
  • ¼ x cucumber – dice (1cm)
  • ½ x tomato – dice (1cm)
  • ¼ x lemon – halve and juice
  • ½ tbsp x olive oil (for dressing – from your pantry)
  • 2 tbsp x sour cream
  • olive oil, salt and pepper (from your pantry)


Step 1

Prepare all ingredients as indicated above.

Step 2

Heat a little olive oil in a large frying pan over medium heat. Add the sausages and cook for 12 to 15 minutes, turning occasionally, until cooked through. Remove and keep warm.

Step 3

To make the salad dressing, mix the lemon juice and olive oil (see quantity above for dressing) in a bowl/mug.

Step 4

In a large salad bowl, mix these ingredients for the Tabbouleh: cauliflower, onion, parsley, mint, dill chives, tomato. Drizzle the dressing over the salad and season with freshly ground salt and pepper to taste. Toss to combine.

Step 5

To serve, place the sausages and tabbouleh on the plate. Add a dollop of sour cream on the side.
