Ingredients to serve 1

  • 1 x sirloin steak
  • 2 tbsp x butter (from your pantry)
  • 1 clove x garlic – crush, peel and chop finely
  • 2.5ml x chilli flakes
  • 3g x fresh parsley – chop coarsely
  • ½ x broccoli – cut into large florets
  • ½ x lemon – cut in half
  • 15g x parmesan cheese – grate finely
  • 10g x Capers - chopped
  • 2.5g x Sambal Oelek
  • olive oil, salt and pepper (from your pantry)
  • cling wrap, tin foil (from your pantry)

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Bring a saucepan of lightly salted water to the boil for use in Step 4.

Washing Instruction

Wash your hands, broccoli and capers well. Rinse your fresh parsley thoroughly and drain on paper towel.

Gino's Tip

Remember to take your steak out of the fridge and allow it to come up to room temperature about one hour before cooking, frying, or grilling it from cold will stop the heat from penetrating to the middle as efficiently and you’ll end up with an unevenly cooked steak.

Step 1

Chilli & Garlic Butter: Add the butter, chopped garlic, chilli flakes, chopped capers, sambal oelek, chopped parsley, freshly ground salt and pepper in a small bowl.

Step 2

Steaks: Put a dry griddle/frying pan on high heat. On a chopping board rub both sides of each steak with olive oil and season with a little salt and pepper (not too much as the butter is already seasoned). Place steaks in the hot pan and sear for 2 to 3 minutes either side for a medium steak. Adjust time to suit your preference. Important – only turn steaks once using tongs (or spoons). Steaks should not overlap. When done transfer to a chopping board, to the same pan add your chilli and garlic butter and cook until your butter froths, remove your pan from the heat and add your steaks to the pan.

Step 3

Lemon & Parmesan Broccoli: Add the broccoli florets to your boiling water and cook gently for 5-6 minutes on medium heat until cooked, soft but slightly crunchy. Once cooked, remove from heat and season well with salt and pepper and a good squeeze of lemon. Scatter with the parmesan cheese and keep warm.

Step 4

Divide your steak and butter amongst your servings as well as your lemon & parmesan broccoli on the side.
