Solo:Tuna Sweet Potato Jackets

Baked sweet potatoes served with flaked tuna, finely sliced red onion, chilli, yoghurt and lime juice. Garnished with fresh coriander. A really tasty, quick and easy mid-week supper dish.

Ingredients to serve 1

  • 1 x sweet potato, washed
  • 1 tin x tuna in brine, drained, flaked
  • ¼ x red onion, finely sliced
  • ¼ x fresh chilli, deseeded, finely chopped
  • ½ x lime, halved, squeezed
  • 40ml x plain yoghurt
  • 3g x fresh coriander, roughly chopped
  • olive oil (from your pantry)
  • salt and pepper (from your pantry)


Step 1

Preheat the oven to 200⁰C.

Step 2

Cut the sweet potato into quarters lengthways. Place on a baking tray, splash with olive oil and season with coarsely ground salt. Bake in the oven until tender - about 20 to 25 minutes.

Step 3

Place the sweet potato on the serving plate. Top with flaked tuna, red onion, chilli, a little lime juice, a dollop of yoghurt and chopped coriander.

Step 4

Serve and enjoy.
