Method
Step 1
Prepare all ingredients as indicated above.
Step 2
Place the following ingredients in a pan or saucepan: linguine, cherry tomatoes, onion, garlic, olive oil, freshly ground salt and pepper, chilli flakes and boiling water. Keep a few basil leaves aside for the garnish and add the remaining leaves to the pan. Place the pan on the stove on high heat and bring to the boil. Allow the mixture to cook for about 9 minutes, stirring frequently until the water has almost evaporated and the linguine is al dente – that’s cooked but firm to the bite and not soft.
Step 3
Chop the remaining basil that you set aside for the garnish.
Step 4
To serve, place the pasta mixture in the bowl. Scatter with chopped basil and grated parmesan.
