Tomato Chicken & Sweetcorn

Free range chicken with cumin, garlic, chilli and tomato sauce. Chilli-butter sweetcorn on the side.




Ingredients to serve 2

  • 2 x free range chicken breasts
  • 1 tsp x ground cumin
  • 1/2 x onion – peel and chop finely
  • 2 cloves x garlic – crush, peel and chop finely
  • 1 x fresh chillies – de-seed and chop finely (optional)
  • 2 x tomatoes
  • 2 x sweetcorn cobs – remove outer sheaf
  • 1/2 tsp x chilli powder
  • 5g x coriander – chop finely
  • butter (from your pantry)
  • olive oil, salt and pepper (from your pantry)

Ingredients to serve 4

  • 4 x free range chicken breasts
  • 2 tsp x ground cumin
  • 1 x onion – peel and chop finely
  • 4 cloves x garlic – crush, peel and chop finely
  • 2 x fresh chillies – de-seed and chop finely (optional)
  • 4 x tomatoes
  • 4 x sweetcorn cobs – remove outer sheaf
  • 1 tsp x chilli powder
  • 10g x coriander – chop finely
  • butter (from your pantry)
  • olive oil, salt and pepper (from your pantry)

Method

Step 1

Chicken marinade: Mix the following ingredients in a large, flat bowl: cumin, a few glugs of olive oil, salt and pepper. Cut the chicken breasts into long strips - about 3 strips per breast. Add the chicken strips and cover with the marinade. It’s best to use your hands to make sure all pieces are totally covered. Set aside to marinate for a few minutes while you start the tomato sauce and sweetcorn.

Step 2

Tomato sauce: Place the whole tomatoes in a bowl of boiling water. After a few minute, remove the tomatoes and place on a chopping board. Slice the ends off each tomato and peel the skins – they should peel away easily. Then chop the tomatoes into small squares about 1cm wide. Place a saucepan on med-to-high heat and add a few glugs of olive oil. Add the chopped onion and sauté until translucent – about 3 or 4 minutes. Then add the garlic and chilli and cook for another minute or two. Be careful garlic will burn quickly if the heat is too high. Now add the tomatoes and some salt and pepper. Turn the heat down to medium and let the mixture cook for about 10 minutes. The sauce should be thick.

Step 3

Sweetcorn: Put a saucepan of lightly salted water onto boil. Add the whole sweetcorn cobs and boil for about 5 minutes until tender. Drain water away, return saucepan to the stove (turn the heat OFF). Add a few pats of butter and sprinkle with chilli powder. Allow to stand for a few minutes until the butter is melted.

Step 4

Chicken: Place a large griddle pan or frying pan on medium to high heat. Add the chicken pieces and pan fry for about 3 or 4 minutes on each side. The chicken should not overlap - rather cook in batches if your pan is too small. When the chicken is cooked through (not pink inside), remove from heat and set aside.

Step 5

To serve: Divide the chicken strips between the plates. Cover with tomato sauce and scatter with chopped coriander. Add a serving of sweetcorn on the side.
