Solo: Steak Sub

Seared steak strips inside a fresh sub with salad and the most amazing garlic and lemon aioli. Roasted carrots on the side.

Ingredients to serve 1

  • 1 x sirloin steak
  • 1 x sub roll
  • 2 x carrots – peel and halve lengthwise
  • 1 clove x garlic – crush, peel and chop finely
  • 10g x salad leaves
  • 1/2 x onion – peel and slice
  • 1/4 x lemon – half and juice
  • 30ml x mayonnaise
  • . x olive, oil, salt & pepper (from your pantry)
  • . x tin foil (from your pantry)


Step 1

Preheat the oven to 200°C. Prepare the ingredients as indicated above.

Step 2

Line a baking sheet with tin foil. Place the carrots on the tin foil (don’t overlap), drizzle with olive oil and scatter with salt and pepper. Put the carrots in the oven to roast for about 20 to 25 minutes.

Step 3

Place a large frying pan on the stove on high heat. Rub the steak all over with olive oil and season well with salt and pepper. When the pan is hot, place the steak in the pan and fry for 3 minutes each side (medium to rare), turning only once with tongs (or spoons). Cook for longer on each side if you prefer your steak medium or well done. When done, remove from pan and aside to rest.

Step 4

Add a few glugs of olive oil to the steak pan and return to the stove on medium heat. Add the onion and cook, stirring occasionally, for 8 to 10 minutes until lightly browned. Season with salt and pepper to taste.

Step 5

Put the following ingredients in a bowl to make the aioli: mayonnaise, garlic, salt, pepper and HALF the lemon juice. Stir to combine and set aside.

Step 6

About 10 minutes before the carrots are done, place the rolls on one of the racks in the oven to bake.

Step 7

Place the steak on a cutting board. Using a very sharp knife, slice the steaks against the grain: this means cutting across (and not parallel to) the long parallel muscle fibres (or grain) in the meat creating short fibres in each piece and delivering tender slices of meat.

Step 8

To serve, cut the roll open and drizzle some aioli on the roll. Top with the steak strips, onion, salad leaves and a little more aioli. Add a serving of roasted carrots on the side with a splash of lemon juice over the top of the carrots.
