Beef Lettuce Wraps

Ginger, chilli, and lime infused beef in lettuce cups with cayenne pepper spiked sweet potato wedges.




Ingredients to serve 2

  • 200g x steak mince
  • 1 clove x garlic – crush, peel and chop finely
  • 5g x fresh ginger – peel and chop finely
  • 1 x limes
  • 1 ½ x spring onions – slice thinly
  • 1 x lettuce – separate into leaves
  • ½ tbsp x soy sauce
  • 1 tbsp x sesame oil
  • 1 tsp x fish sauce
  • 1 x fresh chillies – deseed and chop
  • 5g x fresh coriander – chop
  • 2 x sweet potatoes – cut into wedges
  • 1 tsp x cayenne pepper
  • . x salt and black pepper (from your pantry)
  • . x wax paper (from your pantry)

Ingredients to serve 4

  • 400g x steak mince
  • 2 cloves x garlic – crush, peel and chop finely
  • 10g x fresh ginger – peel and chop finely
  • 2 x limes
  • 3 x spring onions – slice thinly
  • 2 x lettuce – separate into leaves
  • 1 tbsp x soy sauce
  • 2 tbsp x sesame oil
  • 2 tsp x fish sauce
  • 2 x fresh chillies – deseed and chop
  • 10g x fresh coriander – chop
  • 4 x sweet potatoes – cut into wedges
  • 2 tsp x cayenne pepper
  • . x salt and black pepper (from your pantry)
  • . x wax paper (from your pantry)

Method

Step 1

Preheat the oven to 200°C.

Step 2

Prepare all ingredients as indicated above. Line an oven tray with baking paper. Using the fine side of the grater, grate the skin of the lime to create zest. Then cut the lime in half and juice. Mix the soy sauce, fish sauce, sesame oil and half the lime juice in a small bowl, set aside.

Step 3

Place the sweet potato wedges on the tray and drizzle enough olive oil to coat, cayenne pepper (it’s a little spicy and optional) salt and pepper. Mix and make sure the sweet potatoes are all nicely coated, arrange on a single layer – it’s important that they don’t overlap so they can brown nicely (you may need to use two trays). Bake for 35- 40 minutes, until golden brown. Check them after 20 minutes and give the tray a shake. They sometimes stick until they are nicely browned on the bottom so don’t worry too much about turning them over.

Step 4

Place a large frying pan on a medium to high heat. Season the steak mince with salt and pepper. When the pan is hot, fry the mince for 5–7 minutes until brown, set aside.

Step 5

Place the garlic, ginger and chilli and cook for 1 minute then add ¾ of the sauce you mixed earlier and cook for another 1 minute. Add in the steak mince and spring onion and mix it all well. Season to taste.

Step 6

Spoon some of the mince mixture into the lettuce leaves, top with the fresh coriander and serve alongside the sweet potatoes and get stuck in!
