Method
Step 1
Preheat the oven to 200°C.
Step 2
Prepare all ingredients as indicated above.
Step 3
Toss your sweet potatoes in a large mixing bowl with a good drizzling of olive oil, salt, and pepper. Scatter onto an oven tray and roast for 35-40 minutes or until golden and cooked through.
Step 4
Season the steak mince generously with salt and pepper. Shape the mince into patties – one per person.
Step 5
Place a large frying on the stove on high heat and pour in a little olive oil. When the pan is hot, add the patties (no overlapping). They should sizzle when they hit the pan (if the pan is hot enough). Cook the patties for about 4 to 6 minutes per side. Make sure they are nicely browned and cooked through. Keep in mind they will go in the oven to melt the cheese so don’t overcook them. When done, place the burgers on a baking tray and top with the blue cheese. Set aside.
Step 6
When the sweet potatoes are ready get them out the oven turn the setting over to grill and put the cheese-topped patties in for 2 minutes for the cheese to melt.
Step 7
Wipe the pan you used to cook the burgers and toast the buns lightly in the pan.
Step 8
Toss your apple slices and baby spinach along with your lemon juice, olive oil, salt, and pepper. Serve the burger on the toasted bun with the dressed apple slices and baby spinach and sweet potato wedges on the side.
