Roast Tomato Tagliatelle

Balsamic roasted cherry tomatoes with capers, lemon zest tagliatelle. Topped with feta & fresh basil.




Ingredients to serve 2

  • 350g x cherry tomatoes – cut in half
  • 50g x feta
  • 1 tbsp x capers – rinse and roughly chop
  • 5g x basil – tear
  • ¾ tbsp x balsamic vinegar
  • ½ x lemon
  • 200g x tagliatelle
  • ¼ tsp x sugar (from your pantry)
  • 75ml x DD Balsamic Glaze
  • . x olive oil (from your pantry)
  • . x salt and black pepper (from your pantry)
  • . x tin foil (from your pantry)

Ingredients to serve 4

  • 700g x cherry tomatoes – cut in half
  • 100g x feta
  • 2 tbsp x capers – rinse and roughly chop
  • 10g x basil – tear
  • 1 ½ tbsp x balsamic vinegar
  • 1 x lemon
  • 400g x tagliatelle
  • ½ tsp x sugar (from your pantry)
  • 150ml x DD Balsamic Glaze
  • . x olive oil (from your pantry)
  • . x salt and black pepper (from your pantry)
  • . x tin foil (from your pantry)

Method

Step 1

Preheat the oven to 200°C.

Step 2

Prepare all ingredients as indicated above.

Step 3

Place the tomatoes on a tin foil lined oven tray. Season with salt, sugar and black pepper and toss with a generous glug of olive oil and balsamic vinegar. Turn the tomatoes so the seed side is facing upward. Roast for about 15-20 minutes, until golden and softened.

Step 4

Get a large pot of salted water on to boil. When the water is at a rolling boil throw in the pasta for 5 minutes. When it is cooked but still has a slight bite, its ready. Drain the pasta but reserve 3 tsp of the water from the pasta for the tomatoes.

Step 5

Place your pasta in a serving bowl and dress it with a little more olive oil and salt.

Step 6

Take the tomatoes out when they are cooked, pour over the water reserved from the pasta and an extra glug of olive oil. Spoon the tomatoes and all the liquid onto the pasta.

Step 7

Top with the capers, basil, feta and lemon zest, a small squeeze of juice and a final crack of black pepper and enjoy! Drizzle over as much or as little balsamic glaze as needed.
