Ham & Mushroom Pasta Bake

Fafalle pasta and mushrooms covered in a creamy cheese, spring onion and ham sauce.




Ingredients to serve 2

  • 200g x farfalle pasta
  • 125g x button mushrooms – slice
  • 4 stalks x spring onions – slice finely
  • 2 tbsp x flour
  • 75g x ham – cut into strips
  • 75g x mature cheddar – grate coarsely
  • 1 cup x milk (from your pantry/fridge)
  • 2 tbsp x butter (from your pantry/fridge)
  • olive oil, salt & pepper (from your pantry)

  • 400g x farfalle pasta
  • 250g x button mushrooms – slice
  • 8 stalks x spring onions – slice finely
  • 4 tbsp x flour
  • 150g x ham – cut into strips
  • 150g x mature cheddar – grate coarsely
  • 2 cups x milk (from your pantry/fridge)
  • 4 tbsp x butter (from your pantry/fridge)
  • olive oil, salt & pepper (from your pantry)

Method

Step 1

Preheat the oven to 180⁰C

Step 2

Bring a large saucepan of lightly salted water to the boil. Add a few drops of olive oil and the farfalle and cook for 6-8 minutes. Once cooked, drain and keep warm in a colander over a saucepan of hot water. Sprinkle farfalle with a little olive oil to prevent it from sticking together.

Step 3

Melt a little butter in a large saucepan. Fry the mushrooms for a couple of minutes. Season to taste. Once nicely browned, remove and set aside. Use some kitchen paper to wipe out the pan.

Step 4

Melt the remaining butter in the pan on medium heat, then add most of the spring onions (set aside some onions for the topping) and sauté for about a minute. Stir in the flour, then gradually stir in the milk until you have a creamy sauce. Increase the heat and bring the sauce to a gentle boil. Stir for a few more minutes until slightly thicker. Turn off the heat, stir in the ham and most of the cheese (set aside some cheese for the topping). Season to taste.

Step 5

Place the cooked farfalle and mushrooms into a large ovenproof casserole dish. Pour in the sauce and mix well. Top with the remaining cheese and spring onions. Bake for 10 minutes until golden. Remove from oven and allow to cool for a few minutes before serving.
