Cold Pad Thai Salad

A super healthy salad made with Superlite Shirataki Noodles. These noodles have NO carbs and only 11 calories per 100g.




Ingredients to serve 2

  • . x NOODLE SALAD
  • 2 bags x Superlite Angel Hair Noodles
  • 1 tbsp x fresh ginger – peel and chop finely
  • 2 cloves x garlic – crush, peel and chop finely
  • 1 x limes – cut into quarters
  • 100g x bean sprouts
  • 20g x fresh coriander – chop roughly
  • 2 stalks x spring onions – slice at an angle
  • 1 x fresh chillies – de-seed and chop finely
  • 5g x fresh chives – chop
  • . x DRESSING
  • 1 tbsp x rice vinegar
  • 1 tbsp x Thai fish sauce
  • 1 tbsp x tamarind paste
  • 1 tbsp x soy sauce
  • 1/2 tbsp x fresh ginger – grate finely
  • 1 clove x garlic – crush, peel and chop finely
  • 1/2 x orange
  • 1/2 x lemon
  • 4 tbsp x flaked almonds
  • 1 1/2 tbsp x olive oil (from your pantry)

Ingredients to serve 4

  • 4 bags x Superlite Angel Hair Noodles
  • 2 tbsp x fresh ginger – peel and chop finely
  • 4 cloves x garlic – crush, peel and chop finely
  • 2 x limes – cut into quarters
  • 200g x bean sprouts
  • 40g x fresh coriander – chop roughly
  • 4 stalks x spring onions – slice at an angle
  • 2 x fresh chillies – de-seed and chop finely
  • 10g x fresh chives – chop
  • . x DRESSING
  • 2 tbsp x rice vinegar
  • 2 tbsp x Thai fish sauce
  • 2 tbsp x tamarind paste
  • 2 tbsp x soy sauce
  • 1 tbsp x fresh ginger – grate finely
  • 2 cloves x garlic – crush, peel and chop finely
  • 1 x orange
  • 1 x lemon
  • 8 tbsp x flaked almonds
  • 3 tbsp x olive oil (from your pantry)

Method

Step 1

Remove the Superlite Noodles from the bag and place in a sieve. Rinse under cold running water and drain. Place in a HOT frying pan on medium to high heat and cook off the water – about a minute. Set aside to cool in a bowl.

Step 2

Prepare all the fresh ingredients for the noodle salad as indicated above.

Step 3

Grate the rind off the orange and the lemon to create zest. Cut the orange and lemon in half and juice. Set aside for the dressing.

Step 4

Put a dry pan on medium to high heat. Add the flaked almonds to the pan and toast for a minute or two until lightly browned. Shake the pan often so that they don’t burn. Remove and set aside to cool.

Step 5

Make the dressing as follows: mix the vinegar, fish sauce, tamarind paste, soy sauce, olive oil, ginger, garlic, orange zest and juice, lime zest and juice in a small bowl.

Step 6

Place the spring onions, coriander (set a little coriander aside for the garnish), chives, sprouts, fresh chilli in a large bowl. Mix together gently. Add the cold Superlite Noodles and gently toss together.

Step 7

Add the dressing (set a little dressing aside for the plating) to the noodle salad and gently toss together.

Step 8

Serve immediately, garnished with the remaining coriander, toasted flaked almonds, a squeeze of lime and a drizzle of the remaining dressing.
