Pan-fried Thai Curry Fish

A delicious combination of Thai curry flavoured fish, ginger honey carrots and crunchy broccoli delicately flavoured with lemon and garlic.




Ingredients to serve 2

  • 2 fillets x hake/angelfish – deboned & deskinned
  • 2 tsp x Thai red curry paste
  • 2 tbsp x olive oil for the fish marinade (from your pantry)
  • 1 tbsp x lemon – halve and juice
  • 4 x carrots – peel and slice
  • 1/2 tbsp x fresh ginger – peel and chop finely
  • 1 tsp x honey
  • 1 tbsp x fish sauce
  • 1/2 head x broccoli – break into florets
  • 1 clove x garlic – crush, peel and chop finely
  • 1 tbsp x fresh coriander – chop coarsely
  • olive oil, salt and pepper (from your pantry)

  • 4 fillets x hake/angelfish – deboned & deskinned
  • 4 tsp x Thai red curry paste
  • 4 tbsp x olive oil for the fish marinade (from your pantry)
  • 2 tbsp x lemon – halve and juice
  • 8 x carrots – peel and slice
  • 1 tbsp x fresh ginger – peel and chop finely
  • 2 tsp x honey
  • 2 tbsp x fish sauce
  • 1 head x broccoli – break into florets
  • 2 cloves x garlic – crush, peel and chop finely
  • 2 tbsp x fresh coriander – chop coarsely
  • olive oil, salt and pepper (from your pantry)

Method

Step 1

Mix the Thai red curry paste with olive oil and sea salt in a large flat bowl. Add the fish fillets and coat the fish all over with the oil and curry mixture. Leave to marinate for about 5 minutes.

Step 2

Heat a little olive oil in a small frying pan on medium to high. Add carrots and ginger and stir fry for about 2 minutes. Now add the fish sauce, honey, lemon juice and pepper and cook on high heat for a further 2 to 3 minutes until carrots and ginger are lightly caramelised and sticky.

Step 3

Heat a little olive oil in another large frying pan on medium to high. Add the fish fillets and cook for 4 or 5 minutes on each side.

Step 4

Bring a saucepan of lightly salted water to the boil. Add the broccoli and cook for 2 minutes. Drain and add back to the saucepan. Add in the garlic and a drizzle of olive oil and toss through.

Step 5

To serve, divide the fish fillets between the plates and add a serving of carrots and broccoli on the side. Squeeze a little lemon juice over the fish. Scatter with chopped coriander.
