Spaghetti Puttanesca

Bacon, olives and capers in a robust sauce which is hot, spicy, salty and fragrant - served with spaghetti al dente.




Ingredients to serve 2

  • 125g x bacon – cut into strips
  • 1 tbsp x capers
  • 1/2 tsp x chilli flakes
  • 5g x fresh basil – tear leaves into pieces
  • 1 clove x garlic – crush, peel and chop finely
  • 1/2 tsp x oregano
  • 25g x Parmesan cheese – grate finely
  • 1 tbsp x fresh parsley – chop coarsely
  • 40g x pitted black olives
  • 200g x spaghetti
  • 1/2 tbsp x tomato paste
  • 1 tin x whole tomatoes
  • olive oil, salt and pepper (from your pantry)

Ingredients to serve 4

  • 250g x bacon – cut into strips
  • 2 tbsp x capers
  • 1 tsp x chilli flakes
  • 10g x fresh basil – tear leaves into pieces
  • 2 cloves x garlic – crush, peel and chop finely
  • 1 tsp x oregano
  • 50g x Parmesan cheese – grate finely
  • 2 tbsp x fresh parsley – chop coarsely
  • 80g x pitted black olives
  • 400g x spaghetti
  • 1 tbsp x tomato paste
  • 2 tins x whole tomatoes
  • olive oil, salt and pepper (from your pantry)

Method

Step 1

Heat a few glugs of olive oil in large pan over a medium heat and the add garlic. Sauté until fragrant - about 1 minute. Add the bacon and fry for 5 minutes until browned. Add tinned tomatoes, tomato puree, olives, oregano, and chilli flakes. Break up the tomatoes with a spoon and let the sauce over medium-low heat for about 15 minutes. Stir in the capers and season to taste with salt and pepper.

Step 2

Bring a large saucepan of lightly salted water to the boil. Add a few drops of olive oil and the spaghetti and cook for 6-8 minutes. Don’t overcook the pasta - you want it al dente, that’s slightly chewy and uniformly translucent. Once cooked, drain and return the pasta to the same pot. Sprinkle spaghetti with a little olive oil to prevent it from sticking together.

Step 3

Now add the cooked sauce to the pasta in the pot, as well as the chopped parsley and torn basil leaves. Toss over low heat until sauce coats pasta, for about 3 minutes.

Step 4

Serve with finely grated parmesan cheese on the side.
