Chicken Baked in a Bag

Chicken breast baked in a bag with mushrooms, white wine and fresh thyme, served with pan fried lime courgettes.




Ingredients to serve 2

  • 2 x free range chicken breasts
  • 75g x shimeji mushrooms – chop off ends
  • 100g x portabellini mushrooms – cut into quarters
  • 1 tbsp x butter (from your pantry)
  • 5g x fresh thyme – strip leaves
  • 2 cloves x garlic – crush, peel and slice
  • 75ml x white wine
  • 4 x courgettes – slice on the diagonal
  • 1 x limes – squeeze juice
  • vegetable oil (from your pantry)

Ingredients to serve 4

  • 4 x free range chicken breasts
  • 150g x shimeji mushrooms – chop off ends
  • 200g x portabellini mushrooms – cut into quarters
  • 2 tbsp x butter (from your pantry)
  • 10g x fresh thyme – strip leaves
  • 4 cloves x garlic – crush, peel and slice
  • 150ml x white wine
  • 8 x courgettes – slice on the diagonal
  • 1 x limes – squeeze juice
  • vegetable oil (from your pantry)

Method

Step 1

Preheat oven to 220⁰C with a baking tray inside.

Step 2

Make a large tin foil envelope: Take about a meter of tin foil. Fold in half. Close up two sides by folding the edges over to make an envelope with one open side. (4 portions – make two envelopes).

Step 3

Mix all your ingredients for the bag in a bowl: chicken, Shimeji mushrooms, portabellini mushrooms thyme leaves, garlic, butter, wine. Season with salt and freshly ground black pepper. Place all the ingredients including the liquid into the foil bag making sure not to pierce the bag. Close the remaining side and place on the baking tray in the hot oven for 25 minutes.

Step 4

Place a few glugs of olive oil in a frying pan on the stove on medium high heat. Lightly sauté the courgettes until they start to brown – about 5 or 6 minutes. Once they are cooked add a squeeze of fresh lime and season. Set aside.

Step 5

Remove the bag from the oven and tear open carefully (be careful the steam does not burn you). Empty the bag contents onto a plate and serve with the courgettes.
