Asian Lettuce Wraps

Asian Lettuce Wraps

Tasty pork mince flavoured with sambal oelek (ground chilli sambal) wrapped in a butter lettuce leaf. Yum!




Ingredients to serve 2

  • 250g x lean pork mince
  • 1 x red onion – chop finely
  • 1 x red pepper – deseed and chop
  • 1 clove x garlic – crush, peel and chop
  • 1 tsp x ginger – peel and grate finely
  • 1 tbsp x sambal oelek
  • 2 tbsp x soy sauce
  • 4 tbsp x hoisin sauce
  • 1/2 tbsp x rice vinegar
  • 1 tsp x xylitol
  • 1/2 x lime
  • 1 tbsp x fresh coriander – chop coarsely
  • 1 tsp x dried onion flakes
  • 1 stalk x spring onion
  • 1 head x lettuce
  • vegetable oil (from your pantry)

Ingredients to serve 4

  • 500g x lean pork mince
  • 2 x red onion – chop finely
  • 2 x red pepper – deseed and chop
  • 2 cloves x garlic – crush, peel and chop
  • 2 tsp x ginger – peel and grate finely
  • 2 tbsp x sambal oelek
  • 4 tbsp x soy sauce
  • 8 tbsp x hoisin sauce
  • 1 tbsp x rice vinegar
  • 2 tsp x xylitol
  • 1 x lime
  • 2 tbsp x fresh coriander – chop coarsely
  • 2 tsp x dried onion flakes
  • 2 stalks x spring onion
  • 2 heads x lettuce
  • vegetable oil (from your pantry)

Method

Step 1

Place a few glugs of vegetable oil in a large frying pan on medium to high heat. Add the red onions, peppers, garlic and ginger and sauté until the onions become translucent, about 4 to 5 minutes. Now add the lean pork mince, breaking it up with a spoon and mixing it in to the other ingredients. Cook for about 6 to 8 minutes until the mince is nice and brown.

Step 2

Then add the hoisin sauce, soya, rice wine vinegar, xylitol and sambal oelek. Turn the heat down to medium and let it cook for a further ten minutes stirring occasionally so it does not stick. Squeeze the lime over the cooked mince. Spoon the meat into a serving bowl and set aside.

Step 3

To serve, place two lettuce leaves on each plate. Place some of the mince mixture onto each one, garnish with the fresh coriander, spring onion and onion flakes and roll up like a wrap.
