Lamb Koftas with Tomato Salad

North African inspired flavours of cumin, coriander and mint combine to make a delicous lamb kofta. Served with sweet tomato salad on the side.




Ingredients to serve 2

  • . x LAMB KOFTAS
  • 250g x lamb mince
  • 6 x bamboo skewers
  • ½ tsp x ground cumin
  • 1 tsp x ground coriander
  • 1 clove x garlic – crush, peel and chop finely
  • 1 tbsp x fresh mint – chop coarsely
  • 1 x lemons – cut into wedges
  • 75ml x yoghurt
  • . x olive oil, salt and black pepper (from your pantry)
  • . x TOMATO SALAD
  • 2 x tomatoes – chop
  • ¼ x red onion – slice finely
  • ½ tbsp x fresh mint – chop coarsely
  • ¼ tsp x xylitol
  • 3 tbsp x olive oil (from your pantry)
  • ½ clove x garlic – crush, peel and chop finely
  • 1 tbsp x red wine vinegar
  • ¼ tsp x chilli flakes
  • . x salt and pepper (from your pantry)

  • 500g x lamb mince
  • 12 x bamboo skewers
  • 1 tsp x ground cumin
  • 2 tsp x ground coriander
  • 2 cloves x garlic – crush, peel and chop finely
  • 2 tbsp x fresh mint – chop coarsely
  • 2 x lemons – cut into wedges
  • 150ml x yoghurt
  • . x olive oil, salt and black pepper (from your pantry)
  • . x TOMATO SALAD
  • 4 x tomatoes – chop
  • ½ x red onion – slice finely
  • 1 tbsp x fresh mint – chop coarsely
  • ½ tsp x xylitol
  • 6 tbsp x olive oil (from your pantry)
  • 1 clove x garlic – crush, peel and chop finely
  • 2 tbsp x red wine vinegar
  • ½ tsp x chilli flakes
  • . x salt and pepper (from your pantry)

Method

Step 1

Lamb Koftas: mix together the following prepared ingredients: lamb mince, ground cumin, ground coriander, garlic, fresh mint. Divide the mixture into 6 (2 portions) or 12 (4 portions) balls, then roll each ball on a board with a cupped hand to turn them into ovals. Thread onto the bamboo skewers and brush with oil. Put a dry frying pan on medium to high heat. When until you can feel a good heat rising, then place the koftas in the pan and cook for 3 or 4 minutes each side. Don’t turn until they are well sealed or the meat will stick to the grill or pan. Set aside when done.

Step 2

Tomato Salad: mix the following prepared ingredients in a salad bowl: tomatoes, red onion, fresh mint. Make the salad dressing by combining xylitol, olive oil, garlic, red wine vinegar, red chilli flakes, salt and freshly ground pepper. Pour the dressing over the salad and toss lightly.

Step 3

Serve the koftas with a dollop of yogurt and tomato salad. Lemon wedges on the side. Drizzle lemon juice on the koftas.
