Thai Beef & Melon Salad

A tasteful balance of fresh coriander, mint, fish sauce, garlic, chilli flakes combined with succulent sirloin strips, melon and baby spinach.




Ingredients to serve 2

  • 250g x sirloin steak
  • ¼ x melon – peel, de-seed and dice
  • ½ x green pepper – de-seed and slice
  • ½ x red pepper – de-seed and slice
  • ¼ x red onion – peel and slice finely
  • 25g x fresh coriander – chop coarsely
  • 10g x mint – strip leaves off stalks
  • 100g x baby spinach – wash
  • 1 x limes – juice
  • 1½ tbsp x fish sauce
  • 1 tsp x honey
  • 2 cloves x garlic – crush, peel and chop finely
  • ½ tsp x chilli flakes
  • salt and pepper (from your pantry)
  • olive oil (from your pantry)

Ingredients to serve 4

  • 500g x sirloin steak
  • ½ x melon – peel, de-seed and dice
  • 1 x green pepper – de-seed and slice
  • 1 x red pepper – de-seed and slice
  • ½ x red onion – peel and slice finely
  • 50g x fresh coriander – chop coarsely
  • 20g x mint – strip leaves off stalks
  • 200g x baby spinach – wash
  • 2 x limes – juice
  • 3 tbsp x fish sauce
  • 2 tsp x honey
  • 4 cloves x garlic – crush, peel and chop finely
  • 1 tsp x chilli flakes
  • salt and pepper (from your pantry)
  • olive oil (from your pantry)

Method

Step 1

Put a dry frying pan on high heat. On a chopping board rub both sides of the steak with salt, pepper and olive oil. Place steaks in the hot pan and sear for 2 to 3 minutes either side for a medium steak, turning only once (using tongs/spoons). Adjust time to suit your preference. When done, remove and set aside on a plate covered with tin foil to rest for about 10 minutes.

Step 2

Prepare all the salad ingredients as indicated above. Mix the following ingredients in a large salad bowl: melon, green pepper, red pepper, red onion, coriander, mint, baby spinach.

Step 3

Make a salad dressing by mixing the following ingredients in a small bowl: lime juice, fish sauce, honey, garlic, chilli flakes. Whisk with a fork until the honey is dissolved.

Step 4

Slice the steak into thin strips. Using a very sharp knife, slice the steaks against the grain: this means cutting across (and not parallel to) the long parallel muscle fibres in the meat creating short fibres in each piece and delivering tender slices of meat. Add to the salad along with the salad dressing and toss lightly. Let it sit for a few minutes.

Step 5

To serve, divide the salad between the plates.
