Lemon & Garlic Prawns with Watermelon Salad

Prawns sautéed in lemon and garlic butter and served with a watermelon, feta, toasted ciabatta and mint salad on the side.




Ingredients to serve 2

  • 350g x prawns – peeled & de-veined
  • 1 x lemons
  • 2 cloves x garlic
  • 1 tbsp x butter (from your pantry)
  • 1/2 loaf x ciabatta – cut into thick slices
  • 1/4 x watermelon – peel and dice
  • 50g x feta – crumble
  • 10g x mint – strip off leaves
  • 1/4 x red onion – slice finely
  • 1 tbsp x olive oil, for prawns (from your pantry)
  • 2 1/2 tbsp x olive oil, for dressing (from your pantry)
  • 1 tbsp x red wine vinegar
  • salt & pepper (from your pantry)

  • 700g x prawns – peeled & de-veined
  • 2 tbsp x lemons
  • 4 cloves x garlic
  • 2 tbsp x butter (from your pantry)
  • 1 loaf x ciabatta – cut into thick slices
  • 1/2 x watermelon – peel and dice
  • 100g x feta – crumble
  • 20g x mint – strip off leaves
  • 1/2 x red onion – slice finely
  • 2 tbsp x olive oil, for prawns (from your pantry)
  • 5 tbsp x olive oil, for dressing (from your pantry)
  • 2 tbsp x red wine vinegar
  • salt & pepper (from your pantry)

Method

Step 1

Finely grate the rind off the lemon to create zest (½ lemon for 2 portions or 1 lemon for 4 portions). Now squeeze the lemons.

Step 2

Set one garlic clove aside. Peel, crush and finely chop the rest.

Step 3

Combine prawns, olive oil, lemon zest, chopped garlic and HALF the lemon juice, salt and freshly ground pepper in a bowl. Leave to marinate.

Step 4

Place a large frying pan on medium to high heat. Brush the ciabatta slices on both sides with a little olive oil and pan fry until golden, about 1 to 2 minutes each side. Peel the remaining garlic clove and cut in half. Rub the fried bread with the cut-side of garlic clove, then tear into coarse pieces and set aside.

Step 5

Re-heat the frying pan on medium to high heat. Melt the butter. Remove the prawns from the lemon and garlic mix with a slotted spoon and stir fry for 2-3 minutes until nice and golden. Then add the garlic and lemon mix and heat through (about a minute).

Step 6

Salad dressing: Mix olive oil, red wine vinegar and remaining lemon juice in a large bowl. Add salt and freshly ground pepper to taste. Sprinkle a little salt on the watermelon. Add watermelon, ciabatta, feta, herbs and onion to dressing. Toss to combine.

Step 7

To serve, divide the prawns between the plates. Add a serving of watermelon salad on the side.
