Lamb Sliders

Garlic flavoured, lamb mince patties, served between slices of baked sweet potato, slathered in horseradish sauce and garnished with salad leaves, tomato and thin slices of red onion.




Ingredients to serve 2

  • 400g x lamb mince
  • 2 cloves x garlic – crush, peel and chop finely
  • 30g x salad leaves
  • 1 x tomatoes - slice finely
  • 1/2 x red onion – slice finely
  • 2 x sweet potatoes
  • 1 tsp x garlic powder
  • 1 tsp x dried oregano
  • 1 tbsp x fresh coriander – chop finely
  • 3 tbsp x horse radish sauce
  • 1/2 x fresh chilli – de-seed and chop finely
  • olive oil, salt and pepper (from your pantry)

Ingredients to serve 4

  • 400g x lamb mince
  • 4 cloves x garlic – crush, peel and chop finely
  • 60g x salad leaves
  • 2 x tomatoes - slice finely
  • 1 x red onion – slice finely
  • 4 x sweet potatoes
  • 2 tsp x garlic powder
  • 2 tsp x dried oregano
  • 2 tbsp x fresh coriander – chop finely
  • 6 tbsp x horse radish sauce
  • 1 x fresh chilli – de-seed and chop finely
  • olive oil, salt and pepper (from your pantry)

Method

Step 1

Preheat oven to 200⁰C.

Step 2

Peel the sweet potatoes and slice lengthwise to create large discs about 4mm thick. Lightly grease a large baking tray with olive oil and place the discs in the tray. Scatter with salt, pepper, dried oregano and garlic powder. Place in the oven and bake for 10 minutes. Then flip over and bake for another 15 minutes until lightly browned. Remove from oven and set aside to rest for a few minutes.

Step 3

Place the lamb mince in a large mixing bowl. Add salt, pepper and chopped garlic. Mix with your hands until well combined. Then form into oval patties – 3 per person and about 1 cm thick.

Step 4

Heat a little (just enough to coat the pan) olive oil in a frying pan on medium to high. Put the patties in the pan and cook for about 4 or 5 minutes on each side. Be careful, lamb cooks quickly and you don’t want to overcook it.

Step 5

Mix the horseradish, coriander and chilli in a small bowl.

Step 6

To create the sliders, place three sweet potato discs on each plate (or six if the sweet potatoes are small – 2 per slider). Spread a little horse radish mixture on each disc. Place a lamb patty on top and garnish with salad leaves, tomato and red onion slices. Top each slider with another sweet potato disc. Serve immediately.
