Chilli & Lime Beef Skewers

Beef marinated in a Thai-inspired sauce of lime, peanut oil, chilli and fish sauce. Served with a rice noodle salad.




Ingredients to serve 2

  • 300g x sirloin steak
  • 4 x bamboo skewers
  • ½ x fresh chilli – de-seed and chop
  • ½ tbsp x fish sauce
  • 1 tbsp x lime juice – squeeze lime
  • 30ml x peanut oil
  • 100g x rice noodles
  • 10g x fresh coriander – chop coarsely
  • 100g x sugar snap peas – slice in half lengthways
  • ⅛ tsp x sugar (from your pantry)
  • salt and pepper (from your pantry)

Ingredients to serve 4

  • 600g x sirloin steak
  • 8 x bamboo skewers
  • 1 x fresh chilli – de-seed and chop
  • 1 tbsp x fish sauce
  • 2 tbsp x lime juice – squeeze lime
  • 60ml x peanut oil
  • 200g x rice noodles
  • 20g x fresh coriander – chop coarsely
  • 200g x sugar snap peas – slice in half lengthways
  • ¼ tsp x sugar (from your pantry)
  • salt and pepper (from your pantry)

Method

Step 1

Prepare all the ingredients as indicated above.

Step 2

To make the lime marinade, mix the following ingredients together in a small bowl: chilli, fish sauce, lime juice, peanut oil, salt and pepper.

Step 3

Cut the sirloin steaks into cubes (2 to 3 cm). Place them in a large bowl and pour over HALF the lime marinade. Toss to coat all over. Cover and refrigerate.

Step 4

Stir the sugar into the leftover marinade and set aside.

Step 5

Place the rice noodles in a large bowl. Cover with boiling water and soak for 6–8 minutes or until tender. Then drain in a colander and rinse under cold water.

Step 6

Heat a char-grill pan or non-stick frying pan over high heat. Thread the steak cubes onto the bamboo skewers (two skewers per person) and lay in the hot pan, without overlapping. Cook in batches if your pan is too small. Char-grill for 3 or 4 minutes each side for medium. Adjust time to suit your preference – cook for longer if you like your meat well done.

Step 7

Drop the sugar snap peas into a bowl of boiling water for 30 seconds. Remove and rinse under cold water.

Step 8

To make the noodle salad, place the following ingredients in a salad bowl: noodles, coriander, sugar snap peas and leftover marinade. Toss to combine. Check seasoning and add a little salt if required.

Step 9

To serve, divide the noodle salad among plates and serve 2 beef skewers alongside.
