Gammon Steak Salad

Mexican inspired dish - hot and spicy roasted butternut and cherry tomatoes mixed in a salad with sliced gammon steaks and topped with pecorino shavings.




Ingredients to serve 2

  • ½ x butternut
  • 1 x fresh chilli – slice
  • 1 tsp x cumin seeds
  • ½ tsp x dried oregano
  • 1 x red onions – peel and slice
  • 100g x cherry (or baby roma) tomatoes
  • 200g x gammon steaks - slice
  • 40g x salad leaves
  • 5g x fresh coriander – chop finely
  • 40g x Pecorino cheese
  • 2 tbsp x olive oil (from your pantry – for the coriander oil)
  • olive oil (from your pantry – for roasting)
  • paper towels, salt and black pepper (from your pantry)

  • 1 x butternut
  • 2 x fresh chilli – slice

  • 1 tsp x dried oregano
  • 2 x red onions – peel and slice
  • 200g x cherry (or baby roma) tomatoes
  • 400g x gammon steaks - slice
  • 80g x salad leaves
  • 10g x fresh coriander – chop finely
  • 80g x Pecorino cheese
  • 4 tbsp x olive oil (from your pantry – for the coriander oil)
  • olive oil (from your pantry – for roasting)
  • paper towels, salt and black pepper (from your pantry)

Method

Step 1

Preheat the oven to 190°C. Prepare all ingredients per instructions above.

Step 2

Peel the butternut. Cut in half lengthways and de-seed. Then cut into thin slices (1-2 cm wide).

Step 3

Put the butternut, chilli, cumin seeds and oregano in a roasting dish. Sprinkle with a little olive oil and season well with salt and pepper. Roast for about 15 minutes, then add the red onion slices, turning to coat them in the oil. Roast for a further 10 minutes before adding the cherry tomatoes and cooking for a final 10 minutes.

Step 4

Coriander oil: in a small bowl mix the finely chopped coriander with the olive oil and a little salt. Set aside.

Step 5

Heat a little olive oil in a griddle or frying pan over a medium to high heat and fry the gammon steak slices for two to three minutes. Drain on paper towels.

Step 6

Gently mix the roasted vegetables, gammon steak slices and salad leaves together in a large bowl with a tablespoon of the coriander oil.

Step 7

To serve, divide the salad among the plates. With a potato peeler, shave the Pecorino on top and drizzle with the coriander oil.
