Baked Sweet Potato & Chive Sour Cream

Sweet potatoes baked and then topped with chive sour cream and an avocado salsa on the side.




Ingredients to serve 2

  • 2 x sweet potatoes
  • 125ml x sour cream
  • 5g x fresh chives – chop
  • 1 x tomato – dice finely
  • 1 x avocado – peel, de-stone and dice
  • 1 x fresh chillies – slice finely
  • 10g x fresh coriander – chop coarsely
  • 1 x lemons – juice
  • olive oil, salt and pepper (from your pantry)
  • paper towels (from your pantry)

  • 4 x sweet potatoes
  • 250ml x sour cream
  • 10g x fresh chives – chop
  • 2 x tomato – dice finely
  • 2 x avocado – peel, de-stone and dice
  • 2 x fresh chillies – slice finely
  • 20g x fresh coriander – chop coarsely
  • 2 x lemons – juice
  • olive oil, salt and pepper (from your pantry)
  • paper towels (from your pantry)

Method

Step 1

Prepare ingredients as indicated above.

Step 2

Preheat the oven to 180⁰C. Cut the sweet potatoes into quarters lengthways. Place them on a baking tray and rub with a little olive oil and salt. Bake for 25 to 30 minutes turning them over halfway through. If the skin on the outside turns brown that is fine.

Step 3

Salsa: Mix the avocado, fresh coriander and tomato together and drizzle with lemon juice. Add the sliced chilli to taste (optional). Season with salt and pepper.

Step 4

Mix the chopped chives with the sour cream.

Step 5

To serve, divide the sweet potatoes between the plates and slather with a big dollop of sour cream and chives. Add the salsa on the side.
