Sirloin & Mushroom Stir Fry

Sirloin strips stir fried in oyster and soy sauce served on fragrant jasmine rice.

Ingredients to serve 2

  • 300g x sirloin steak
  • ½ cup x jasmine rice
  • 3 tbsp x oyster sauce
  • 1½ tbsp x soy sauce
  • 20g x fresh ginger – peel and grate
  • 150g x Swiss Chard – cut off ends and slice
  • 100g x button mushrooms – slice
  • olive oil, salt & pepper (from your pantry)

Ingredients to serve 4

  • 600g x sirloin steak
  • 1 cup x jasmine rice
  • 6 tbsp x oyster sauce
  • 3 tbsp x soy sauce
  • 40g x fresh ginger – peel and grate
  • 300g x Swiss Chard – cut off ends and slice
  • 200g x button mushrooms – slice
  • olive oil, salt & pepper (from your pantry)


Step 1

Prepare all the ingredients as indicated above.

Step 2

Sirloin: cut the fat off the steak. Then cut into slices (5mm) - thin enough to cook quickly. Cut AGAINST THE GRAIN to get tender slices of meat. In sirloin the grain usually runs on the short length which means you need to cut the steak on the long side. You may want to cut it in half first to avoid having very long strips. Sprinkle the slices with olive oil, salt and pepper and rub all over. Set aside.

Step 3

Mix the oyster sauce and soy sauce together in a bowl and set aside.

Step 4

Bring a saucepan of lightly salted water to the boil. Add the rice and boil gently for 12 minutes on medium heat. Drain and keep warm in a colander over a saucepan of hot water.

Step 5

Heat a large frying pan (or wok) until smoking hot. The heat is important because you want the meat to SIZZLE and not steam. Also cook the meat in SMALL batches (otherwise the pan will cool down and the meat won’t sizzle). Place a single layer of steak strips in the pan, don’t let them overlap and stir fry until nice and brown all over – about 2 minutes. Add a little extra olive oil if the pan becomes too dry. When done, place the meat on a plate and set aside. Repeat until all the meat is done.

Step 6

Wipe the pan (or wok) clean and place on medium to high heat. Add a little olive oil. Stir fry the ginger until golden (about 30 seconds), then add the mushrooms and sauté until nice and brown - about 3 minutes. Now add the Swiss Chard and cook for about a minute until wilted, stirring often. Finally add the steak and soy sauce mixture and stir through for about a minute.

Step 7

To serve, divide the rice between the bowls and top with the steak and mushroom stir fry.
