Solo: Southern Fried Chicken

Seed and spice crumbed chicken thighs with a lemon and chilli broccoli side, with garlic aioli.

Ingredients to serve 1

  • 2 x Chicken thighs (skin on)
  • ½ x egg - from your pantry
  • ½ cup x Southern Fried Chicken Mix
  • . x BROCCOLI
  • ½ x broccoli – cut into small florets
  • ¼ clove x garlic – crush, peel and chop finely
  • ¼ x fresh chilli – discard seeds, slice finely
  • ⅛ x lemon – slice very thinly with skin on
  • . x AIOLI
  • 1½ tbsp x mayonnaise
  • ⅛ x lemon – juice and zest
  • ¼ clove x garlic – crush, peel and chop finely
  • . x olive oil (from your pantry)
  • . x salt and black pepper (from your pantry)
  • . x wax or baking paper (from your pantry)


Step 1

Preheat the oven to 180°C and line a baking tray with wax or baking paper.

Step 2

Prepare all ingredients as indicated above. Note: the lemon is used in both the broccoli dish (slices) and the aioli (juice and zest). To create lemon zest, grate the skin of the lemon using the fine side of the grater. Then cut the lemon in half and juice. Please check ingredients above for quantity.

Step 3

Beat the egg in one bowl and place the Southern Fried Chicken Mix in another. Season the chicken with salt on both sides. Dip each piece of chicken in the egg and then straight into the Southern Fried Chicken Mix, making sure it is well coated. Place it on the baking tray and repeat with all the remaining chicken. Drizzle a little olive oil on each piece and bake in the oven for 35-40 minutes, until golden and cooked through.

Step 4

Make the aioli by mixing mayonnaise, garlic, lemon juice and zest and season to taste.

Step 5

When the chicken is 5 minutes from being ready, start cooking the broccoli. Get a pan nice and hot over high heat, pour in a glug of olive oil and after 30 seconds add the broccoli and a splash of water (the pan should sizzle then you know it is hot enough). Season with salt and pepper. After 1 minute add the garlic and chilli and cook for a further 2-3 minutes until the broccoli is bright green and cooked through but still has a crunch. Take it off the heat and mix through the lemon slices.

Step 6

Serve the Southern Fried Chicken with aioli and a side of broccoli.
