Bockwurst Salad

Bockwurst Salad

No cooking required. Tasty combination of sour dill pickles, preservative free Bockwurst sausages, fresh tomatoes and herbs and a mustardy vinaigrette.




Ingredients to serve 2

  • 4 x Bockwurst sausages – cut into slices (5mm)
  • 300g x dill pickles – slice lengthwise into spears
  • 5g x fresh chives – chop coarsely
  • 5g x fresh parsley – chop coarsely
  • 1 clove x garlic – crush, peel and chop finely
  • ½ x red onion – peel and slice finely
  • 1 x tomatoes – slice finely
  • 1½ tbsp x white wine vinegar
  • 3 tbsp x olive oil (from your pantry)
  • ¼ tsp x xylitol
  • ¼ tsp x mustard powder
  • freshly ground black pepper (from your pantry)

  • 8 x Bockwurst sausages – cut into slices (5mm)
  • 600g x dill pickles – slice lengthwise into spears
  • 10g x fresh chives – chop coarsely
  • 10g x fresh parsley – chop coarsely
  • 2 cloves x garlic – crush, peel and chop finely
  • 1 x red onion – peel and slice finely
  • 2 x tomatoes – slice finely
  • 3 tbsp x white wine vinegar
  • 6 tbsp x olive oil (from your pantry)
  • ½ tsp x xylitol
  • ½ tsp x mustard powder
  • freshly ground black pepper (from your pantry)

Method

Step 1

Prepare all ingredients as indicated above.

Step 2

In a large salad bowl, whisk together the vinegar, olive oil, chopped garlic, xylitol, mustard powder and freshly ground pepper to taste. Now add the sliced red onion, sliced tomatoes, sliced dill pickles, sliced Bockwurst, chopped chives and chopped parsley. Stir gently to mix thoroughly. Cover and refrigerate for 15 minutes.

Step 3

To serve, divide the Bockwurst Salad between the bowls/plates. Serve cold.
