  • 2 tbsp x butter (from your pantry)
  • 3 sachets x honey

  • ¼ cup x water
  • 150g x green beans
  • . x olive oil (from your pantry)
  • . x salt & black pepper (from your pantry)

Ingredients to serve 4

  • 800g x potatoes – peel and cut into quarters
  • 4 tbsp x butter (from your pantry)
  • 6 sachets x honey
  • 600g x pork fillet
  • ½ cup x water
  • 300g x green beans
  • . x olive oil (from your pantry)
  • . x salt & black pepper (from your pantry)

Step 1

Preheat the oven to 200°C. Boil the kettle.

Step 2

Prepare all ingredients as indicated above.

Step 3

Bring a large saucepan of lightly salted water to the boil on high heat. Add the quartered potatoes and cook for around 12-15 minutes (with the lid on) until done - knife should slide in easily. Once cooked, drain. Put a frying pan with a few glugs of olive oil on medium to high heat. Add the potatoes and sprinkle with salt and pepper. Toss every now and again until lightly browned.

Step 4

Rub the pork fillet with salt and pepper. Place a large ovenproof pan over medium heat. (If your pan is not ovenproof, don’t worry you can transfer it to a casserole dish later.) Add butter and honey and stir until butter melts. (Watch the heat carefully as the honey will burn if the pan is too hot). Place the pork fillet in the pan and cook for about 5 minutes until browned on the one side. Turn over and cook for another 5 minutes. Now put the pan in the oven and cook for another 7 minutes.

Step 5

Place a saucepan of lightly salted water on to boil over high heat. Add the green beans and allow the water to come back to the boil, and once boiling again, let it cook for about 4 minutes. Remove from stove and drain. You want the green beans to be a little crunchy.

Step 6

When the pork is done, remove from the oven and transfer the pork to a plate and set aside. Place pan back on the stove top on medium heat and add the water (see quantity above). Stir to scrape up the browned bits. Simmer gently for a few minutes until the sauce reduces a little.

Step 7

Slice pork and plate. Add a serving of green beans and roasted potatoes on the side and drizzle with the honey butter sauce.
