Bacon Beef Rolls & Tangy Red Cabbage Slaw

Lean steak mince wrapped in bacon and baked in the oven. Served with a red cabbage slaw with a tangy mayo, mustard and apple cider vinegar dressing.




Ingredients to serve 2

  • 250g x steak mince
  • 125g x homestyle bacon
  • 50g x mature cheddar – grate finely
  • ½ x egg – beat gently with a fork
  • 1 tsp x chilli powder
  • 1 clove x garlic – crush, peel and chop finely
  • ½ x red cabbage – slice finely
  • 1 x carrots – peel & cut into matchsticks
  • 10g x fresh coriander – chop coarsely
  • 2 x spring onions – slice finely
  • 30ml x apple cider vinegar
  • ½ tbsp x fresh ginger – peel and grate finely
  • 1 tsp x Dijon mustard (for salad dressing)
  • 1 tbsp x Dijon mustard (for the plate)
  • 15ml x mayonnaise
  • . x tin foil, olive oil, salt & pepper (from your pantry)

  • 2 cloves x garlic – crush, peel and chop finely
  • 1 x red cabbage – slice finely
  • 2 x carrots – peel & cut into matchsticks
  • 20g x fresh coriander – chop coarsely
  • 4 x spring onions – slice finely
  • 60ml x apple cider vinegar
  • 1 tbsp x fresh ginger – peel and grate finely
  • 2 tsp x Dijon mustard (for salad dressing)
  • 2 tbsp x Dijon mustard (for the plate)
  • 30ml x mayonnaise
  • . x tin foil, olive oil, salt & pepper (from your pantry)

Method

Step 1

Preheat oven to 190°C. Prepare all ingredients as indicated above.

Step 2

Bacon Beef Rolls: mix the following ingredients in a bowl – steak mince, grated cheddar, beaten egg, chilli powder, chopped garlic, salt and pepper. Divide the mixture into portions – so you have about 3 to 4 rolls person. Roll each portion into a ball. Wrap a slice of bacon around each one. Line a baking sheet with tin foil and place the bacon beef rolls on the baking sheet. Then pop into the pre-heated oven and cook for 35 minutes.

Step 3

Red Cabbage Slaw: Combine the following ingredients in a large salad bowl: cabbage, carrots, and spring onions. Toss to mix.

Step 4

Tangy Dressing: Combine the following ingredients in a jug/mug: apple cider vinegar, grated fresh ginger, Dijon mustard, mayonnaise and season with freshly ground salt and pepper (to your taste). Mix well. Pour over the red cabbage slaw.

Step 5

To serve, divide the bacon beef rolls between the plates and add a serving of red cabbage slaw on the side with a dollop of Dijon mustard.
