Artichoke Onepot

Delicious mix of Italian flavours in a one-step pasta dish. Artichokes and mushrooms with tagliatelle and chard.




Ingredients to serve 2

  • 100g x button mushrooms – slice finely
  • ½ tin x artichoke hearts – open and drain
  • 2 cloves x garlic – crush, peel and chop finely
  • ½ x onion – peel and slice finely
  • 1½ tsp x vegetable stock granules
  • 2 cups x boiling water
  • 200g x tagliatelle
  • ½ tsp x dried oregano
  • 3g x fresh thyme – strip off leaves
  • 50g x swiss chard – slice into thin ribbons
  • 15g x parmesan – grate finely
  • . x olive oil (from your pantry)
  • . x black pepper (from your pantry)

Ingredients to serve 4

  • 200g x button mushrooms – slice finely
  • 1 tin x artichoke hearts – open and drain
  • 4 cloves x garlic – crush, peel and chop finely
  • 1 x onion – peel and slice finely
  • 3 tsp x vegetable stock granules
  • 4 cups x boiling water
  • 400g x tagliatelle
  • 1 tsp x dried oregano
  • 5g x fresh thyme – strip off leaves
  • 100g x swiss chard – slice into thin ribbons
  • 30g x parmesan – grate finely
  • . x olive oil (from your pantry)
  • . x black pepper (from your pantry)

Method

Step 1

Put the kettle on to boil. Prepare all the ingredients as indicated above. Cut the artichokes into bite size pieces.

Step 2

Place a large saucepan on high heat. Add the boiling water (see quantity above) and mix in the vegetable stock granules and a few glugs of olive oil. Break the tagliatelle in half and add to the pot. Mix well to ensure that the pasta gets coated in the oil and doesn’t stick together. Now add the mushrooms, artichoke hearts, onions, garlic, dried oregano, fresh thyme and freshly ground black pepper. Mix gently. When the mixture starts to simmer (boil gently), turn the heat down to low but enough heat to keep the mixture bubbling a little. Cook for 10 minutes, stirring occasionally. Lastly add the swiss chard, stir in and remove the pot from the stove.

Step 3

Serve immediately in a bowl with grated parmesan on top.
