Steak with Chilli & Garlic Butter

Succulent sirloin steak dripping with chilli and garlic butter with a delicious serving of parmesan, lemon broccoli on the side.




Ingredients to serve 2

  • 2 x sirloin steaks
  • 3 tbsp x butter (from your pantry)
  • 2 cloves x garlic – crush, peel and chop finely
  • 1 tsp x chilli flakes
  • 5g x fresh parsley – chop coarsely
  • 1 x broccoli – cut into large florets
  • 1 x lemons – cut in half
  • 25g x parmesan cheese – grate finely
  • 20g x Capers - chopped
  • ½ tbsp x Sambal Oelek
  • . x olive oil, salt and pepper (from your pantry)
  • . x cling wrap, tin foil (from your pantry)

Ingredients to serve 4

  • 4 x sirloin steaks
  • 6 tbsp x butter (from your pantry)
  • 4 cloves x garlic – crush, peel and chop finely
  • 2 tsp x chilli flakes
  • 10g x fresh parsley – chop coarsely
  • 2 x broccoli – cut into large florets
  • 2 x lemons – cut in half
  • 50g x parmesan cheese – grate finely
  • 40g x Capers - chopped
  • 1 tbsp x Sambal Oelek
  • . x olive oil, salt and pepper (from your pantry)
  • . x cling wrap, tin foil (from your pantry)

Method

Step 1

Prepare all the ingredients as indicated above.

Step 2

Chilli & Garlic Butter: Add the butter, chopped garlic, chilli flakes, chopped capers, sambal oelek, chopped parsley, freshly ground salt and pepper in a small bowl.

Step 3

Steaks: Put a dry griddle/frying pan on high heat. On a chopping board rub both sides of each steak with olive oil and season with a little salt and pepper (not too much as the butter will already be seasoned). Place steaks in the hot pan and sear for 2 to 3 minutes either side for a medium steak. Adjust time to suit your preference. Important – only turn steaks once using tongs (or spoons). Steaks should not overlap. When done transfer to a chopping board, to the same pan add your chilli and garlic butter and cook until your butter froths, remove your pan from the heat and add your steaks to the pan.

Step 4

Lemon & Parmesan Broccoli: Bring a saucepan of lightly salted water to the boil. Add the broccoli florets and boil gently for 5-6 minutes on medium heat until cooked but not too soft – you want them slightly crunchy. Once cooked, remove from heat and season well with salt and pepper and a good squeeze of lemon. Scatter with the parmesan cheese and keep warm.

Step 5

Divide your steak and butter amongst your servings as well as your lemon & parmesan broccoli on the side.
