Shiitake Fried Rice

Shiitake mushrooms stir fried with rice, red cabbage, ginger, sesame oil and a soy glaze. Topped with a fried egg, cashews and toasted sesame seeds.




Ingredients to serve 2

  • ½ cup x jasmine rice
  • 100g x shiitake mushrooms - slice
  • 1 x carrots – peel and slice finely
  • ½ x red onion – peel and chop finely
  • ⅛ x red cabbage – slice finely
  • 20g x fresh ginger – peel and grate finely
  • ½ tbsp x sesame oil
  • ½ tbsp x soy sauce
  • ½ sachet x honey
  • ½ tbsp x sesame seeds
  • 40g x cashews – chop coarsely
  • 2 x eggs (from your pantry)
  • . x olive oil (from your pantry)
  • . x salt & black pepper (from your pantry)

Ingredients to serve 4

  • 1 cup x jasmine rice
  • 200g x shiitake mushrooms - slice
  • 2 x carrots – peel and slice finely
  • 1 x red onion – peel and chop finely
  • ¼ x red cabbage – slice finely
  • 40g x fresh ginger – peel and grate finely
  • 1 tbsp x sesame oil
  • 1 tbsp x soy sauce
  • 1 sachet x honey
  • 1 tbsp x sesame seeds
  • 80g x cashews – chop coarsely
  • 4 x eggs (from your pantry)
  • . x olive oil (from your pantry)
  • . x salt & black pepper (from your pantry)

Method

Step 1

Prep: Prepare all ingredients as indicated above.

Step 2

Rice: Bring a saucepan of lightly salted water to the boil. Add the rice and boil gently for 10 minutes on medium heat. Drain and keep warm in a colander over a saucepan of hot water.

Step 3

Cashews: Place a small pan on high heat and dry roast the cashews until lightly browned - about a minute. Toss often to make sure they don’t burn. Remove from stove and set aside.

Step 4

Sesame seeds: Place a small pan on high heat and dry toast the sesame seeds until lightly browned - about a minute. Toss often to make sure they don’t burn. Remove from stove and set aside.

Step 5

Stir fry: Place a few glugs of olive oil in a large frying pan on high heat. When hot, add the mushrooms and a few grinds of black pepper. The mushrooms will soak up all the oil. Cook for 4 minutes, stirring occasionally. Add a few more glugs of olive oil and the cabbage, carrots, onions and ginger and cook for another 4 minutes. Season with a little salt. Now add the soy sauce and honey. Stir constantly for 30 seconds to combine. Add the rice and sesame oil, stir for 30 seconds and remove from the stove and set aside.

Step 6

Eggs: Add a few glugs of olive oil to a clean frying pan on medium heat. When hot, break the eggs and slip into the pan, one at a time and season with a little salt and pepper. Let the egg gently cook without moving it. The whites will start to set after a few minutes, followed by the yolk. Cook for 2 to 4 minutes according to your liking. Remove and set aside.

Step 7

To serve: add the fried rice to a bowl, top with the fried egg, cashews and toasted sesame seeds.
