Balsamic Sausage Penne

100% pure beef sausages in a yummy, made-from-scratch tomato sauce, with penne pasta and fresh basil.




Ingredients to serve 2

  • ½ x carrot – dice finely (5mm)
  • ½ stick x celery – dice finely (5mm)
  • ½ x red onion – peel and chop finely
  • 1 x fresh chillies – de-seed and chop finely
  • 4 x beef sausages
  • ½ tsp x fennel seeds
  • ½ tsp x dried oregano
  • 200g x penne
  • 2 x tomatoes – dice finely
  • 2 cloves x garlic – crush, peel and chop finely
  • 30ml x balsamic vinegar
  • ½ cup x pasta water
  • 3g x fresh basil – tear the leaves
  • 30g x parmesan cheese – grate finely
  • olive oil (from your pantry)
  • salt and pepper (from your pantry)

Ingredients to serve 4

  • 1 x carrot – dice finely (5mm)
  • 1 stick x celery – dice finely (5mm)
  • 1 x red onion – peel and chop finely
  • 2 x fresh chillies – de-seed and chop finely
  • 8 x beef sausages
  • 1 tsp x fennel seeds
  • 1 tsp x dried oregano
  • 400g x penne
  • 4 x tomatoes – dice finely
  • 4 cloves x garlic – crush, peel and chop finely
  • 60ml x balsamic vinegar
  • 1 cup x pasta water
  • 5g x fresh basil – tear the leaves
  • 60g x parmesan cheese – grate finely
  • olive oil (from your pantry)
  • salt and pepper (from your pantry)

Method

Step 1

Note: This pasta is deliberately garlicky and has some chilli heat. Reduce/halve either or both ingredients if you’re not a fan.

Step 2

Prep: Prepare all ingredients as indicated above. Put the kettle onto boil.

Step 3

Sausage: Cut the sausage in half lengthways. Don’t cut all the way through, then open out like a book. Place a few glugs of olive oil in a frying pan on medium heat. Pan fry the sausage on both side until done – about 4 minutes a side. Remove from stove and slice.

Step 4

Pasta: Bring a large saucepan of lightly salted water to the boil on high heat. Add a few drops of olive oil and the penne and cook for 9 minutes. Once cooked, drain the cooking water into a jug (you’re going to use some of this later). Keep penne warm in a colander over a saucepan of hot water.

Step 5

Sauce: Place a few glugs of olive oil in a frying pan on high heat. Add the onion, celery, carrot and sauté for 4 minutes until soft. Turn the heat down to medium and add the garlic, fennel seeds, dried oregano and chilli and cook for another minute. Then stir in the tomatoes, balsamic vinegar and pasta water you kept aside (see quantity under ingredients above). Season well with salt and pepper and cook for another 4 minutes.

Step 6

To serve, transfer the pasta and sliced sausages into the pan with the sauce. Mix well. Scatter the parmesan over the top along with the basil leaves.
