Harissa Pork Fillet

Harissa Pork Fillet

Roasted pork fillet coated in harissa, with apple and cranberry flavoured couscous and broccoli on the side.




Ingredients to serve 2

  • ½ cup x couscous
  • 1 cup x boiling water
  • 2 tbsp x harissa
  • 300g x pork fillet
  • 1 x apple – grate (leave skin on)
  • 2 tbsp x dried cranberries – chop coarsely
  • ½ head x broccoli – break into florets
  • 3g x fresh thyme – strip off leaves
  • . x olive oil (from your pantry)
  • . x salt & black pepper (from your pantry)
  • . x tin foil (from your pantry)
  • . x cling wrap (from your pantry)

  • 1 cup x couscous
  • 2 cups x boiling water
  • 4 tbsp x harissa
  • 600g x pork fillet
  • 2 x apple – grate (leave skin on)
  • 4 tbsp x dried cranberries – chop coarsely
  • 1 head x broccoli – break into florets
  • 5g x fresh thyme – strip off leaves
  • . x olive oil (from your pantry)
  • . x salt & black pepper (from your pantry)
  • . x tin foil (from your pantry)
  • . x cling wrap (from your pantry)

Method

Step 1

Preheat the oven to 200°C. Prepare all ingredients as indicated above. Put the kettle on to boil.

Step 2

Line a large baking sheet with tin foil. Lay the broccoli florets out on one half and drizzle with olive oil. Season with salt and pepper. Set aside (to await the pork).

Step 3

Season the pork fillet well with salt and pepper. Coat with the harissa paste (use your hands or spread with a knife). Place a few glugs of olive oil in a large frying pan on high heat. When hot, add the pork fillet (it should sizzle), and cook for about 5 minutes until browned on the one side. Turn over and cook for another 5 minutes. Remove from the pan and lay on the baking sheet next to the broccoli. Place in the oven and roast for 7 minutes. Remove from oven and allow to rest for a few minutes.

Step 4

Add the couscous and thyme leaves to a heatproof bowl and add the boiling water (see quantities above). Season well and stir. Cover with cling wrap, leave to stand and swell for 10 minutes. Remove the cling wrap, add the cranberries and apple. Stir and fluff up the couscous with a fork.

Step 5

To serve, slice the pork fillet and serve on top of couscous with roasted broccoli on the side.
