Sausage Fusilli

Sausage Fusilli

Fusilli pasta coated in a tomato and fresh rosemary sauce. Topped with tasty pork sausages, and served with green salad.




Ingredients to serve 2

  • 1 x cos lettuce
  • 5g x fresh chives – chop
  • 3g x fresh rosemary – stirp off leaves, chop
  • 200g x fusilli
  • ½ x lemon – have and juice
  • 2 x tomatoes – dice finely
  • 1 tsp x mustard powder
  • ½ x onion – peel and chop finely
  • 2 x pork sausages
  • 2 tbsp x yoghurt
  • . x olive oil (from your pantry)
  • . x salt and pepper (from your pantry)

  • 2 x cos lettuce
  • 10g x fresh chives – chop
  • 5g x fresh rosemary – stirp off leaves, chop
  • 400g x fusilli
  • 1 x lemon – have and juice
  • 4 x tomatoes – dice finely
  • 2 tsp x mustard powder
  • 1 x onion – peel and chop finely
  • 4 x pork sausages
  • 4 tbsp x yoghurt
  • . x olive oil (from your pantry)
  • . x salt and pepper (from your pantry)

Method

Step 1

Prep: Prepare all the ingredients as indicated above.

Step 2

Salad dressing: Mix the lemon juice, mustard, yoghurt and chives in a large mug. Set aside.

Step 3

Sausage: Cut the sausage in half lengthways. Don’t cut all the way through, then open out like a book. Place a few glugs of olive oil in a frying pan on medium heat. Pan fry the sausage on both side until done – about 5 minutes a side. Remove from stove and slice.

Step 4

Fusilli: Bring a large saucepan of lightly salted water to the boil. Add a few drops of olive oil and the fusilli and cook for 6 to 8 minutes. Don’t overcook the pasta - you want it al dente, that’s slightly chewy and uniformly translucent. Once cooked, drain and keep warm in a colander over a saucepan of hot water.

Step 5

Tomato sauce: Place a saucepan with a few glugs of olive oil on high heat. Add the onion and HALF the rosemary and sauté for 4 minutes. Add the tomatoes and cook for 2 more minutes. Now add the pasta and sliced sausages and mix well. Serve immediately.

Step 6

Salad: Tear the salad leaves into a salad bowl. Drizzle with salad dressing.

Step 7

To serve: plate the sausage fusilli and add a portion of salad on the side.
