Thai Beef Larb

Asian flavoured steak mince on basmati rice with loads of fresh mint and coriander and finished with roasted peanuts.




Ingredients to serve 2

  • ½ cup x basmati rice
  • 1 tbsp x peanut oil
  • ½ x onion – peel & chop finely
  • 1 clove x garlic – crush, peel & chop finely
  • 10g x fresh ginger – peel & chop finely
  • ½ stalk x lemongrass
  • 300g x steak mince
  • 1 tsp x fish sauce
  • 30ml x sweet chilli sauce
  • 1 x limes
  • 10g x fresh mint – strip off leaves, chop coarsely
  • 10g x fresh coriander – chop coarsely
  • 1 tbsp x unsalted peanuts – chop coarsely
  • . x freshly ground salt and pepper (from your pantry)

Ingredients to serve 4

  • 1 cup x basmati rice
  • 2 tbsp x peanut oil
  • 1 x onion – peel & chop finely
  • 2 cloves x garlic – crush, peel & chop finely
  • 20g x fresh ginger – peel & chop finely
  • 1 stalk x lemongrass
  • 600g x steak mince
  • 2 tsp x fish sauce
  • 60ml x sweet chilli sauce
  • 2 x limes
  • 20g x fresh mint – strip off leaves, chop coarsely
  • 20g x fresh coriander – chop coarsely
  • 2 tbsp x unsalted peanuts – chop coarsely
  • . x freshly ground salt and pepper (from your pantry)

Method

Step 1

Prep: Prepare all ingredients as indicated above. Put the kettle on to boil. Juice half the limes and cut the rest into wedges.

Step 2

Lemongrass: Bash the lemongrass stalks with a bottle or rolling pin. Cut about 1cm off the end and remove the outer layers. Then lay on a chopping board and cut into the stalk lengthways. Then slice crossways to get “minced” or finely chopped lemongrass. Set aside.

Step 3

Rice: Bring a saucepan of lightly salted water to the boil. Add the rice and boil gently for 10 minutes on medium heat. Drain and keep warm in a colander over a saucepan of hot water.

Step 4

Mince stir fry: Heat peanut oil in a large frying pan over medium to high heat. When hot, add the onion and sauté for 4 minutes until translucent. Add the garlic, ginger and lemongrass. Stir fry for a minute and then add the steak mince. Cook, stirring with a wooden spoon to break up the mince, for about 8 minutes until the mince is browned. Add the fish sauce, sweet chilli sauce and lime juice. Season with salt and pepper to taste. Cook for another minute and then remove from heat. Stir through mint and coriander.

Step 5

Serve the mince with the rice and scatter with peanuts. Serve with lime wedges.
