Solo: Mushroom Minute Steak

Minute steaks quickly seared and served with a decadent brandy, cream and mushroom sauce, over green beans with baby potatoes.

Ingredients to serve 1

  • 1 x minute steak
  • 200g x baby potatoes
  • 1 tbsp x brandy
  • 30ml x cream
  • ½ clove x garlic – crush, peel and chop finely
  • 75g x green beans - cut off ends
  • ¼ x lemon – juice
  • 75g x button mushrooms – slice
  • . x olive oil (from your pantry)
  • . x salt and pepper (from your pantry)


Step 1

Prep: Prepare all the ingredients as indicated above. Put the kettle on to boil. If any baby potatoes are on the large side, cut them in half. Rub the steaks with salt, pepper and olive oil. Set aside.

Step 2

Baby potatoes: Place a large saucepan of lightly salted water on high heat. When the water is boiling add the baby potatoes and allow to boil gently (turn the heat down a bit) for about 15 minutes until tender but not falling apart. If you can easily push a fork in the potato, it’s done. Remove from stove and set aside.

Step 3

Green beans: Bring a saucepan of lightly salted water to the boil. Add green beans and cook for 2 minutes. Once cooked, drain in a colander and keep warm.

Step 4

Minute steaks: Place a large frying pan on high heat and let it get smoking hot. Add the minute steaks (do not overlap, cook in batches if your pan is too small). Sear for just 45 seconds on each side. Remove and set aside to rest for 5 minutes.

Step 5

Mushroom sauce: Heat a few glugs of olive oil in a large frying pan over medium to high heat. Add the mushrooms, garlic, salt and pepper and cook for 3 or 4 minutes until the mushrooms are browned and cooked through. Add the brandy and let it cook away (about 20 seconds) and then add the cream and a splash of water (one or two tablespoons). Stir for about a minute or so and remove from stove and keep warm.

Step 6

To serve: Slice the minute steaks against the grain, and squeeze over a little lemon juice. Plate the steaks over the green beans and potatoes. Top with mushroom sauce.
