Method
Step 1
Preheat oven to 200°C. Prepare ingredients as indicated above.
Step 2
Get a large pot of salted water on to boil over high heat. When the water is at a rolling boil throw in the macaroni and cook for 6 minutes. Drain and set aside.
Step 3
Heat a little olive oil large frying pan over high heat. Add the bacon and cook, stirring, for about 2 minutes, until nice a crispy. Transfer to a plate and set aside.
Step4
Using the same pan over high heat, add the macaroni, milk, mascarpone, salt, pepper and HALF the cheddar. Bring to a gentle boil, stirring constantly, about 3 or 4 minutes.
Step5
Place the macaroni mixture in a casserole dish. Top with the bacon bits, rosemary, and the rest of the cheddar. Add a few grinds of black pepper. Place in the oven for 10 minutes until the cheese is nice and brown.
