Conchiglie Minestrone

Hearty minestrone soup with butter beans, pasta shells, tomato, basil and swiss chard. A real winter tummy warmer!




Ingredients to serve 2

  • 75g x conchiglie (pasta shells)
  • 1 clove x garlic – crush, peel and chop finely
  • 3 tsp x vegetable stock granules
  • 3 cups x boiling water
  • ½ tin x chopped tomatoes
  • 2 tsp x sugar (from your pantry)
  • 1 tsp x dried oregano
  • 1 x onion – peel and chop finely
  • 1 tin x butter beans – open and drain
  • 50g x swiss chard – slice into thin ribbons (1 cm)
  • 10g x fresh basil – remove leaves and slice finely
  • . x olive oil (from your pantry)
  • . x salt & freshly ground pepper (from your pantry)

Ingredients to serve 4

  • 150g x conchiglie (pasta shells)
  • 2 cloves x garlic – crush, peel and chop finely
  • 6 tsp x vegetable stock granules
  • 6 cups x boiling water
  • 1 tin x chopped tomatoes
  • 4 tsp x sugar (from your pantry)
  • 2 tsp x dried oregano
  • 2 x onion – peel and chop finely
  • 2 tins x butter beans – open and drain
  • 100g x swiss chard – slice into thin ribbons (1 cm)
  • 20g x fresh basil – remove leaves and slice finely
  • . x olive oil (from your pantry)
  • . x salt & freshly ground pepper (from your pantry)

Method

Step 1

Prepare all ingredients as indicated above. Put the kettle on to boil. Once boiled, pour 3 cups into a large jug. Mix in the vegetable stock granules to make the veggie broth. Set aside.

Step 2

Place a few glugs of olive oil in a large saucepan (that has a lid) on medium to high heat. Add the onions and a little salt and sauté for 4 minutes. Now add the garlic and oregano and cook for another minute. Then add the veggie stock, conchiglie, chopped tomatoes and sugar. Mix well. When it starts to boil, turn the heat down to low and put the lid on the pot. Leave to cook for 12 minutes, stirring every now and then, until the conchiglie are cooked.

Step 3

Lastly add the butter beans and warm these up for about a minute in the pot. Then add the basil and swiss chard and stir in. Remove the pot from the stove, check the seasoning and serve immediately.
