Sticky Sausages

Sticky Sausages

Beef sausages wrapped in bacon, basted with barbecue sauce. Served with potato and leek mash and salad leaves.




Ingredients to serve 2

  • 75g x streaky bacon
  • 8 x toothpicks
  • 4 x beef bangers (sausages)
  • 45ml x barbecue sauce
  • 1 clove x garlic – crush, peel and chop finely
  • ½ tsp x mixed herbs
  • 20g x salad leaves
  • ½ tbsp x red wine vinegar
  • 1 x leeks – cut off ends and slice finely
  • 2 tbsp x milk (from your pantry)
  • 3 x potatoes – peel and dice (1.5cm)
  • 3 tbsp x olive oil for salad dressing (from your pantry)
  • . x olive oil for sausages (from your pantry)
  • . x freshly ground salt and pepper (from your pantry)

Ingredients to serve 4

  • 150g x streaky bacon
  • 16 x toothpicks
  • 8 x beef bangers (sausages)
  • 90ml x barbecue sauce
  • 2 cloves x garlic – crush, peel and chop finely
  • 1 tsp x mixed herbs
  • 40g x salad leaves
  • 1 tbsp x red wine vinegar
  • 2 x leeks – cut off ends and slice finely
  • 4 tbsp x milk (from your pantry)
  • 6 x potatoes – peel and dice (1.5cm)
  • 6 tbsp x olive oil for salad dressing (from your pantry)
  • . x olive oil for sausages (from your pantry)
  • . x freshly ground salt and pepper (from your pantry)

Method

Step 1

Prep: Preheat oven to 200⁰C. Prepare all ingredients as indicated above.

Step 2

Basting sauce: Mix these ingredients in a small bowl: barbecue sauce, garlic and mixed herbs. Set aside.

Step 3

Sausages: Wrap a piece of bacon around each sausage and secure with a toothpick at each end. Place sausages in a single layer in a large casserole dish. Pour the basting sauce over the sausages and then place in the casserole dish in the oven. Bake for 35 to 40 minutes until the sausages are cooked through.

Step 4

Mash: Place a large saucepan of lightly salted boiling water on high heat. Add the potatoes and leeks. Leave to simmer for 10 minutes. Check to see if tender, then drain and keep in saucepan. Add the milk, butter and a little salt and pepper. Mash the potatoes. Set aside and keep warm.

Step 5

Salad: Mix the olive oil and red wine vinegar with a little salt and pepper in a cup. Place salad leaves in a salad bowl. Pour dressing over the leaves and toss to coat.

Step 6

Serve sausages on a plate with mash and salad on the side.
