Tofu Pho

Tofu Pho

Tofu and rice noodles with courgettes and broccoli in a ginger and garlic broth. Served with bean sprouts, fresh coriander and cashew nuts.




Ingredients to serve 2

  • 100g x mushrooms – slice thinly
  • ½ x broccoli – cut into florets
  • 2 tbsp x sambal oelek (spicy!)
  • 2 tbsp x vegetable stock fond
  • 1.5 litres x boiling water
  • 2 cloves x garlic – crush, peel and chop finely
  • 20g x fresh ginger – peel and cut into matchsticks
  • 1 x star anise
  • 2 tsp x soy sauce
  • 1 x courgettes
  • 300g x tofu – cut into 2cm cubes
  • 25g x cashew nuts
  • 150g x rice noodles
  • 3g x fresh coriander
  • 40g x bean sprouts
  • 2 tsp x sesame oil
  • ½ x lime – cut into wedges
  • . x olive oil (from your pantry)
  • . x salt and black pepper (from your pantry)

Ingredients to serve 4

  • 200g x mushrooms – slice thinly
  • 1 x broccoli – cut into florets
  • 4 tbsp x sambal oelek (spicy!)
  • 4 tbsp x vegetable stock fond
  • 3 litres x boiling water
  • 4 cloves x garlic – crush, peel and chop finely
  • 40g x fresh ginger – peel and cut into matchsticks
  • 2 x star anise
  • 4 tsp x soy sauce
  • 2 x courgettes
  • 600g x tofu – cut into 2cm cubes
  • 50g x cashew nuts
  • 300g x rice noodles
  • 5g x fresh coriander
  • 80g x bean sprouts
  • 4 tsp x sesame oil
  • 1 x lime – cut into wedges
  • . x olive oil (from your pantry)
  • . x salt and black pepper (from your pantry)

Method

Step 1

Preparation: Prepare all ingredients as indicated above. Boil the kettle. Cut the courgettes in half lengthways and then cut into half-moon slices.

Step 2

Tofu: Place the soy sauce and a generous glug of olive oil in a frying pan on medium heat and sauté the tofu for 10 minutes until golden. Transfer to a bowl and set aside.

Step 3

Pho: Place the frying pan back on medium-high heat with a drizzle of olive oil and fry the garlic and ginger for one minute. Then add the mushrooms and courgettes and fry for another 4-5 minutes until golden. Add HALF the sambal oelek (optional), star anise, tofu, the vegetable stock fonds and the boiling water. Add the rice noodle nests and push it down under the water. Cook for 3 minutes. Finally add the broccoli and cook for a further 1-2 minutes until cooked. Season to taste.

Step 4

Serve in a bowl garnished with fresh coriander, bean sprouts, cashew nuts and the rest of the sambal oelek (optional). Drizzle with the sesame oil and a squeeze of lime juice.
